Why are bar/prep faucets so tall? Would a lav faucet do?

I've ordered my main faucet and now I am looking for a faucet for our little pantry/coffee/desk area. It's very visible to the rest of the house, so I want it to be less kitchen-y and utilitarian-looking. All of "bar" faucets I am finding are quite tall, at least 13-16", and with a very short spout reach. (The Talis S bar faucet that matches my kitchen faucet is really tall- 16"!)

I have never had a prep/bar sink so I can't really picture usage... is there some reason you need such a tall faucet? The sink will probably be about 10"x12" or 12"x13" and I'm certain we'll be filling/rinsing the coffeepot there, and probably some veggie prep once in a while when 2 cooks are working.

I'd prefer a lower-profile faucet. But is there a reason why they are all so tall?

Could I use a lav faucet with a height of 6 ot 7 inches?
