Help me coose the best features for 100% custom cabinets

I am meeting with a custom cabinet maker on Monday, and wondering what features and attributes are most important. I have never ordered custom cabinets before, and there seem to be so many different options:

What wood thickness,1/2" 3/4" or 1"? Is thicker always better or does it become overkill at some point?

Plywood for the boxes or not, and if so, how thick?

What is the best wood to use for paint-grade cabinets? Is poplar too soft? What about Beech vs. maple. Is there another good alternative to consider?

What is the best liner for the boxes, melamine or veneer--are ther other options to consider?

Should the drawer mounts be on the sides or underneath?

I heard one company say they lined the bottoms of all sink cabinets with stainless steel--is this a great idea, or overkill?

What are the best hinges?

Love soft close for drawers, but is it as nice to have on doors also?

Is MDF bad? Is it always necessary to use (along with veneer) on a flat panel style door?

What cabinet feature do you like best, or wish you had?

Any advice on these and any other custom cabinet decision-making issues greatly appreciated!
