This was so good. My best friend's Dh couldn't leave it alone, which made me chuckle.
I changed the recipe to this and will do it again when next time I make it.
Tuna salad served with Ritz crackers
2 - 12 oz cans tuna drained and chuncked ( I use tuna in water )
Drain in colander and mash until all the water is out
1/2 cup Hellmans mayonnaise
2 hard cooked egg, chopped I mashed and mashed until the eggs were uniform in color.with a fork
4 tsp lemon pepper seasoning
4 tsp lemon juice
1 scallion that I finely chopped in my hand held blender
When I mixed the ingredients, I mashed and mashed again with a fork to get it to almost a spread consistency, so everything was thorougly blended together.
Mix and chill
This is the original recipe from a friend that took the salad to a monthly potluck
2 - 6 oz cans tuna drained and chuncked ( I use tuna in water ) 1/4 cup chopped celery 1/4 cup mayonnaise 2 tbs black olives finely chopped 1 hard cooked egg, chopped 2 tsp lemon pepper seasoning 2 tsp lemon juice
Curious could you use a green onion instead of scallion? chopped fine? or a bit of sweet onion? Also, for those who don't like tuna (like DH when he was with us) could you substitute canned white chicken?
