Sauteed Red Cabbage with Mandarins

Ruby red cabbage with bright orange mandarins. Serve it alongside pork, salmon, lamb, beef, chicken or turkey,

2 tsp olive oil

6 cups cored and shredded red cabbage

11-oz can mandarin oranges, drained

2 tbsp balsamic vinegar

1 tbsp sugar

Heat the oil in a large skillet over medium-high heat. Add the cabbage and cook until it wilts, 3 minutes; stirring frequently. Add the mandarins, vinegar and sugar and cook for 1 minute, until the liquid reduces. Season with salt and pepper.

You can also use the pre-shredded red cabbage or even green cabbage or the coleslaw mix as well.
