Electric vs Gas for pressure canning?
Comments (18)Dave I've never used a propane tank before, is it easy to learn? I want to buy a larger size canner, will this burner be adequate? Thanks. Using a propane tank does have a learning curve if you have never used a grill or similar set up. And with no experience, you may need some help setting it up, adjusting the regulator pressure, getting the air input and the flame balanced to blue, etc. But once it is set up and the regulator is calibrated and the burner knobs adjusted for proper air flow then it is just a matter of turning it on and lighting the burner. From that point on you just unscrew the regulator from the bottle, get your bottle filled or exchanged, and screw the regulator back in. No further adjustments needed. Keep in mind that no regulator or gas hose comes with this particular burner so if you don't already have one you'll need to order one when you order the burner. You'll want to set it to 20 lbs. assuming you will be using the standard grill-sized tank. Then each of the 3 knobs on the stove have an adjustment screw on the back of them to adjust the air flow. You want as blue flame as possible with no yellow. Increase the air flow to get blue flames. Yes this burner will handle even the big ones. It is 35,000 BTU split into 3 separate burners and the 2 biggest ones are split in L and R halves os can be used on 1/2 a burner at a time. In other words, it is fully adjustable. 12,000 BTUs is the recommended max for canners so you don't damage the canner itself so you have plenty of room to work with. For the Presto 23 qt. I use only the center ring of the 3 burner rings (10,000 BTU) on medium to come up to pressure and then reduce it to medium-low to hold pressure. Comments (5)You can bake just fine in a gas convection oven. By the way, there are no "true" convection gas ovens - some gas ovens do have an electric assist element around the fan but that's not true covection. "True" convection probably does provide a bit more even heat for things like multiple racks of cookies, but many of us bake just fine in a gas convection oven and gas ovens are better for things that require moist heat like roasted meats and poultry and bread. Also, with a gas oven you get a gas broiler which is vastly superior to an electric broiler. Comments (14)Your 200A service should be fine to run a wall oven. The oven will need 220V (volts, not amps). Easiest way to explain it is ... You know how the plug for your dryer looks different than plugs for the fridge or lamps? An electric dryer also uses 220V, and those require different outlets with different wiring. It sounds like you have that in place already, so it would be cheapest to stay with that. If you have a gas range and electric wall oven you have the best of both worlds, IMHO. But, if you want a gas range you just need to hire a plumber to run a gas line over to it. Comments (18)If your family regularly cooks in a wok, gas is the only option. None of the induction solutions work as well. On the other hand, BlueStar's built in wok ring is almost as good as cooking in a restaurant kitchen. If wok cooking isn't a concern, then differences between both technologies are more subtle. You can easily find pros and cons for either, and honestly I don't think there is a clear winner. Make sure you research the models though. Just as gas has lots of horribly designed and cheaply made models, that's also true for induction (and in that case, induction is probably a more expensive repair). But you absolutely can find high quality gas and high quality induction. Personally, I'd only ever buy a stove that has analog knobs for each burner.
