depth of sink for undercounter trash can/ Silgranite vs SS

hello,

We are looking at kitchen sinks, single bowls, offset drains. We have found two that we like: One is Blanco silgranite, has interior dimensions of 30 1/2" X 16 1/2", depth is 9 1/2". The other one is Elkay SS, interior dimensions 28" x 15 3/4", depth 8". Comparable priced.

Our question is: is 9 1/2" too deep for comfort and to fit a trash can underneath? Should we go with the 8" deep SS to fit a taller trash can, or we will not be able to tell the difference in depth? I am afraid that the Blanco silgranite will stain and that the SS will scratch. Are undermount sinks with granite countertops easy to replace?

Cabinets will be white (just bought them on Friday :-) and I have not chosen the countertops yet but they will be granite or silestone. Sorry for asking, we read through several threads on this but our heads are exploding, I cannot make decisions, I have decision-freeze!
