Help with evaluating builders?

OK, we got some quotes and narrowed our choice of builders down to two. Pool specs are roughly comparable and we like both designs but the builders are very different. How to choose?

Builder #1: 15 years of experience as a builder and designer, but the well respected medium sized company he used to work for went out of business. (Official story: change in ownership right before our area experienced a massive collapse of the housing market.) He moved a few doors down the block to a company that used to only do pool servicing and remodeling, and has now put in a handful of pools as part of that company. He claims to work with the same subs as before.

This guy obviously knows his stuff. We like his priorities, and he emphasized the quality of his build. He offers what appears to be a slightly higher grade of components in his quote. His company throws in a year of free servicing (enticing to a nervous pool newbie) which at least means they plan to be coming back for visits for the first year.

Builder #2. The big builder in our area, all in-house with no subcontractors. The designer is very professional and very responsive - we like her a lot. Her pool is a little more standard but it integrates well into our yard. She too knows her stuff, but she's also clearly a salesman. Her bid was significantly higher (around 20%), and the company's reputation is probably her biggest justification for that. Some of her components are more expensive to maintain and we're skeptical about the benefit (notably Pool Frog). But we've heard only good about the company.

Obviously the next step is to check refs, but I'm looking for help extracting the info we need. We would lean toward builder 1 even if he weren't the low bidder, but we're nervous about going with an unknown company without a significant track record. What info do I need from the references that would help in this situation?

For comparison, there's a third builder of good local reputation we're leaning against. His quote was comparable to builder 1 (only a little higher) but well below the big builder.
