Sweet potatoes are sliced into 1/2 inches and fryed in brown sugar. Then the sweet potatoes are skewered into bbq sticks and sold as kamote Q (sweet potato bbq). Another way is to slice the sweet potatoes in sticks like french fries and fried as well in brown sugar. When cooked the sugar will give the sweet potatoes a crispy coating. I also like the saba bananas done the same way. Very yummy. You have to keep turning the sweet potatoes or saba bananas because the brown sugar will stick to the bottom and burn. Or sweet potatoes tempura style. Or tepan style. Both yummy as well. Oh yes another all time favorite classic here, cubed sweet potatoes and bean sprouts (Optional, shredded carrots for colour, ground pork or beef, slice green beans, etc) are half cooked first then wrapped in spring roll wrappers. Not the tiny wrappers but the dinner plate size ones. Dipping sauce is whatever you like. We like vinegar, garlic, onions, chilies, salt and pepper some add sugar. Or sweet sauce.

Just do it.... Peel the sweet potatoes....then simmer in water until they can easily be pierced with a fork. Then butter a casserole, slice the potatoes and put a layer in the dish, sprinkle with a little salt, sprinkle a little ( or a lot) of brown sugar...add another layer and salt and brown sugar....drizzle it all with melted butter...put into the oven at 350 and bake for 25 to 30 minutes... Remove from the oven and turn the temperature of the oven to 425 and line up marshmallows on top. Bake until browned about 15 minutes....maybe less. I also think a sprinkle of cinnamon would be good before you add the marshmallows....or perhaps ginger. Linda C

My camera memory card died so I can't take pictures right now. But the sweet potato dish was a hit. Here's how I ended up making it. Didn't use an egg, and the vanilla yogurt was moldy so didn't use that., it would have been unnecessary anyway. I scrubbed four sweet potatoes, and put them in a 9 inch metal pan with a little bit of water in the bottom, and baked them at 400 degrees for just under an hour. Then I peeled them and diced them up and mixed them with about a half cup of crushed pineapple, 2 TBLSP of melted butter and 2 TBLSP of brown sugar and a heaping half tsp. of cinnamon and a tiny pinch of salt. Mixed and mashed this all together and put it into a greased 8 inch pyrex baking dish. Topped with mini marshmallows mixed with chopped walnuts, two big hand fulls. Took this to dad's house covered in foil. Baked at 375 covered for about 35 min. and then uncovered for about 10 more. I have to say I kinda liked it and the marshmallows went well with the toasted nuts. They didn't add much other than color and texture to the top, but that was not necessarily a bad thing. It was totally a dessert though, but since I just had ham and rice pilaf and salad to round out the meal, it was fine, not too sweet under those circumstances.

Thank you @Feathers11. I'll only be making the sweet dish (with pecans, brown sugar, cinnamon, etc. topping) if I can't find the savory I'm looking for. I also like garlic on roasted sweet potatoes. I saw the recipe you listed when I googled, but the recipe I wanted to duplicate did not have onions or parsley. Thank you so much for your suggestion. I'm sorry to be a pain and think I will have to just give up on the ones I was trying to duplicate as so far nothing sounds right. It's been probably over a couple of years since I've had those, and I just think what the spices might be. I'll probably try some of the ideas mention here in the future though!!
