We went to Costco today after which we went out for lunch. Rich had an oyster Po' Boy, I had fish tacos. We wanted to try this new sea food restaurant that just opened near us. It was very good. Will go back. Not feeling like dinner but should the mood strike either one of us, I picked up a roast chicken at Costco. May have a salad and some chicken slices.

Georgysmom, must be nice to have a good seafood place close. This is Florida and you'd think we'd have a lot, but not here! I would love an oyster Po'Boy. Or just fried oysters.

We went out to eat again! Some young friends opened a sports bar in the next town over. I had a portobella mushroom, red peppers, brie, greens with a balsamic reduction on ciabatta. Hubby had burger. Quality food. Great rolls.

I took lasagna out of the freezer, with garlic bread. I am trying to recover from the trip, it wore me out. Gets harder and harder to bounce back.

popped out some precooked chops i had made, and added the sides....it's so nice to do that...don't know why i waited so long to pre-cook!

We are having some homemade chicken strips and some oven fries.
I went out to the garden and harvested some more sugar snap peas and some kale so am thinking about a salad, too.

Raven, I know what you mean about bouncing back. I had to force myself to get some stuff done today. What would we do without our freezers?

Glenda, our niece made the best squash casserole for Easter. She didn't have cornbread so she used Italian bread crumbs. It was so good. Harry was reading the new menu from the restaurant here and it has fried green tomatoes on it. Guess I'll be eating out more often :-)

Susan, I like being able to make a "normal" recipe and freezing the leftovers for another day. Sure saves a lot of time. Wish I'd done more of it when I was working.

Carol, do you stagger your planting or do most things grow any time of year in CA? You always have such amazing vegetables to go out and pick. Your dinner sounds delicious--especially those vegetables!!

Baked tilapia, asparagus and rolls.

One of my girls will eat fish, but the other won't touch it, so I made a few pigs in blanket for them. Added some leftover brocolli and pineapple. Sometimes you gotta just go easy.

I also made a cheeseburger casserole for tomorrow since oldest has soccer practice and DH is the asst coach. I have been using ground turkey but only had hamburger this time. Quick and easy. Someone asked me for the recipe last time I mentioned it.

Brown and drain 1 lb of hamburger (or turkey). Add 1/4 cup of diced onions if you like. Add 8 oz of tomato sauce and 3/4 cup ketchup to meat. Add mixture to greased 8x8 pan. Top with sliced cheese and cresent roll dough (bread dough) Bake 350 for 15-20 minutes.

Ham, fresh baked sweet potatoes, English pea salad, and the last roll froms Easter dinner. It was so good.

Man I only found this forum today and just this thread is an inspiration for new dinners. My wife works and one of my jobs (pleasures) is to have a nice homecooked meal for her when she gets home after a long day and commute.

What do you mean you went out on the garden for fresh kale? My garden's covered in snow!

How's this sound? Romaine and radicio with home made red wine vinegar and virgin olive oil dressing, homemade gnocchi in ragu, sautéed thinly sliced inside round done with garlic and oregano, green beans with garlic, parmesan and panko bread crumbs, boulangerie French stick and a glass of Ontario Merlot. Split a blood orange for desert.

I owned an Italian trattoria, and am expected something different every night, maybe a thread like this will help, keep the ideas coming.

SC (mind if I shorten your name)? After reading your dinner menu I think you'll be giving more inspiration than getting. That must've taken hours. Your wife is sure lucky not to have to cook when she gets home! What is "inside round"? Is it beef? Whatever it is, it sure sounds good.

Thanks Patti, inside round is a cut of beef, I'll have to ask my American mom what it's called back home. That meal takes about 30 minutes from start to serve. The key for any dinner is the prep, Maison d' plaice, which is a fancy French word for prep. Direct translation is house in place.

The tomato sauce was made Sunday, gnocchi made and frozen in small batches. Beans take 10 minutes, beef maybe 15 minutes, put water on to boil at start. Salad what 5 minutes?

You wouldn't wait more than 40 minutes for your entre to arrive in any restaurant.

Our climate is very moderate and we can grow almost anything all year long.
I have been harvesting some celery recently.....I got the seedling last summer at our county fair. It is so much better than store bought.

Patti, I live baked sweet potatoes with just about any protein I have eaten it with. Haven't eaten it with fish, so can't comment on that. I like it with an all veggie plate, too - baked sweet potato, squash boiled with brown sugar and butter, black eyed peas, fried okra, corn-on-the-cob - yummm.
