DIY move shower parts 7/8' away from wall?

Hi everyone

We're going to get our bathtub surround changed from a laminate system to tile. We need to move the shower plumbing out by 7/8 of an inch to accommodate the addition of the cement board and tile (we're not ripping out the plaster to go down to studs).

We'd like to do this part of the job ourselves, but I'm wondering if it is a reasonable job for us to take on. I know how to solder, but since there it would be such tight quarters (we wont have access behind the shower just the front) I was hoping to use epoxy type welds such as "Just for Copper".

We're also wanting to replace a vanity with a pedestal sink. I understand that's do-able, but you need a professional to move the rough-in for the waste line. True?
