Need Your Suggestions....Once Again

Our Legion is planning an "all you can eat" fried chicken dinner for the end of next month. I'll be using my grandmothers recipe for the chicken, which is soooooo good. I need some ideas for sides. We've talked about the usual mashed potatoes, gravy, green beans and rolls. But...I want something different that's good and easy. I made red beans and rice on Sunday to take to a pot luck and everyone loved it. Do you think this would be a suitable side with fried chicken? Please....tell me what you would serve as sides for a crowd, keeping cost and ease of preparation in mind.

Red beans and rice would be a wonderful accompaniment for fried chicken! Of course, you could also do a raw spinach salad, with bacon bits and sliced fresh mushrooms and a vinagrette dressing. Or instead of the usual green beans, how about a three-bean salad? Harvard beets?
In Florida at this time of year, you may not want a lot of hot food!
You must be a wonderful cook to be asked to prepare your Legion's dinners so frequently! Ever considered relocating to Central Texas (and bring your pots and pans!)?

How about potato salad and baked beans? Both could be made ahead of time and the beans baked just before serving. It is getting a little warm for heavy food, but I have to say the potatoes and gravy sound yummy--gravy's just too hard to make a big potful and keep warm.

I love the beans and rice at Popeye's Chicken.

Now I want fried chicken sooooo bad!

Wall color is really hard to say without seeing it, but my inclination would be to put more brown into the wall color. I like light and reflective backsplashes (comes from years of dark under counter spaces with no lights, I'm sure, but why not take advantage of natural lighting even if you can supplement it?). I would not do all cream though. With the light cabinets and mostly light granite, I would want some color without too much competition with the granite. Again, without seeing it, I would be thinking of starting my search with some coppery/bronze tones (metallic or glass) either as accents or possible the whole thing (especially with glass -- if you like that look). You seem to have something simple in mind, and I think that is good. Don't do the random accents, mosaics or such that can get busy or spotty looking and compete with the granite. I had a hard time finding something simple but not too plain to go with my marble. Don't be afraid to think outside the box or search for different combinations. I wound up combining subways from one dealer with accent pieces I found at two different stores. I have two pencil liners on either side of a third (color bordering metallic). It came about after getting sample pieces of a number of different accents and sitting on the floor laying them out to compare and then starting to combine different options. If you aren't finding what you want, see if you can create it.

Aura matte is enough of a sheen for how my family lives in and uses our house. I think it's pretty tough stuff - all I ever need to do is wipe it down. Matte is not equivalent to all flats. Each brand's sheen levels differ. There is not a set standard for those gloss levels which means that all flats, eggs, satins are not created equal. Aura matte has a slight bump of sheen. It is not shiny but it is not a dead flat-flat. Most of the time the word "matte" indicates a degree or two or three or more up from typical flat. Even tho there are no standards, I feel comfortable saying that across the board and in all brands matte does not mean the same thing as flat. Both Aura matte and eggshell will touch up reasonably well -- better than most other brands. But, that all depends on specific color and how angles of light fall across the walls. Aura matte or egg are both good bets. Hope that helps. :-)

Sylvia, I'm so glad you visit the Grieving Forum regularly and post alerts here. I used to visit more regularly myself, and should get back to that. When I first found the forum, Lulie Wayne was a prominent member. She had lost her daughter six years before. I was only a couple of years into my grief, and I remember thinking six years was such a terribly long time. Now it's been eight years since my Jill died. Anyway, you always manage to say the right thing, and I know you've helped a lot of people get through one of the worst times of their lives.

Grew up always having English peas with our fried chicken.

How about creamed peas and pearl onions, or just peas and pearl onions. Maybe add some sliced mushrooms.

You have really come up with some great suggestions. It's just so hard for me to cook for others, as I always want people to really like what I serve. I don't think I would have ever made it in the restaurant business.

With fried chicken, I like a bit of acid to cut the fat, so this recipe works for us.

Coleslaw, Serves 6 to 8

8 cups Cabbage -- finely chopped
1/4 cup Carrot -- shredded
3 tbsp Sugar
Â½ tsp Salt
1/8 tsp Pepper
1/4 cup Milk
Â½ cup Mayonnaise
1/4 cup Buttermilk
1 Â½ tbsp White vinegar
2-Â½ tbsp lemon juice
1 tsp horse radish (I donÂt use)
Use the food processor to cut the cabbage and carrots into rice sized pieces.
In a large bowl, combine the sugar, salt, pepper, milk, mayonnaise, buttermilk, vinegar, horseradish and lemon juice. Beat until smooth.
Add the cabbage and carrots. Mix well. Cover and refrigerate at least 4 hours before serving.

I belong to a Legion Post. I would say corn on the cob with a crock pot of butter. Boil your corn, wrap with tin foil and put in a cooler. It keeps it warm for a long time.
Cold Slaw and Potatoe Salad are also good sides. But also would the red beans and rice!
Our post ask for sides most of the time. They put up a paper for sign ups.

All your suggestions sound really good. How about some wedges of good fresh ripe tomaotes. Of course with our area we would add some chicken and noodles to pile on those mashed potatoes! :) And don't forget the pie!
