How did you conquer a hated vegetable?

I'm curious to know. I so badly want to like eggplant, zucchini, squash, and mushrooms, but the textures just put me off. I like eggplant parmesan, and I can somewhat enjoy mushrooms if they're pureed and mixed with other flavors. Has anyone overcome a similar texture problem?
