Do you taste as you cook?

Do you regularly taste and adjust seasonings as you prepare your dishes?

Not me, I never taste. I just throw stuff in that I like, and serve.

If I'm cooking for others or cooking something new I'll sure taste. If I'm just whipping up something I've done a million times for hubby and me, not so much. Tasting is important for many reasons. I once learned I mixed up the spices added and my meal would have been awful tasting. I would have been embarrassed had it been served to my guests with the wrong ingredients.

No, I add spices/herbs/salt and pepper at the beginning, according to the recipe. I keep salt(table and sea) and pepper (white and black) at the table, for each to add as they like. I do not consider myself an outstanding cook, only adequate.

I took a little course put on by the Wolf distributor here ... it was very informational. They didn't recommend using straight convection for anything that has much of a side on the pan, because the side blocks the air circulation, which is how the food is being cooked, so the top will cook faster than the inside. But it's fine to use convection with cookie sheets and broiler pans, or at least try to use the lowest side available. Also, don't cover food if you're using convection. They recommended convection bake for pies, not straight convection. And, if you are using straight convection, flavors will not transfer (eg, it's okay to bake a tray of bacon-wrapped scallops on one rack and cookies on another). They also said to turn down heat 25 degrees and reduce time 20 to 25 percent with convection, which matches what I've heard elsewhere. Here is the percentage of oven element used for each mode (this is for Wolf) Bake stone = 40% broil, 60% stone Bake = 10% broil, 90% bake (the hidden element on bottom) Convection bake = 90% fan, 10% bake Broil = 100% broil Convection broil = 100% broil, 100% fans Roast = 25% broil, 75% bake Convection roast = 25% broil, 75% fans Convection = 100% fans

I have two stoves - one in the kitchen on the main floor, and one in the galley kitchen in the finished basement, so I don't have a problem. But it sounds as if you don't have that arrangement, so I guess I would cook the item with the shorter baking time first and try to keep it warm in the microwave, then bake the second item. Do you have a toaster oven that maybe you could use for one of the items? I hope you figure it out. Veta

This thread, which I didn't catch the first time around, made me think. In general, I cook to eat and feed my family. However, I do enjoy baking for special occasions. I think that if I didn't work outside the home I would cook more...and be more adventurous. But, I work and have a long commute so by the time I get home I have to make fast meals with little time for creativity or major prep work. So, we eat a lot of frozen veggies--as is out of the bag, pre-cooked meats warmed up, pasta, soup, occasionally waffles/pancakes/eggs, potatoes, etc. I.e., for the most part things that I can cook fast. One up side to this is that our meals haven't changed that much w/o a kitchen since we do have a MW, Toaster Oven, and hot plate to cook with! One very big downside to this, though, is that my children are not learning to cook like I did from my mom. Back on topic... After finding this site and reading about zones, I realized that one thing that I really wanted was a baking center. So when my kitchen was being designed I had it in the back of my head that whatever we ended up with had to have an area I could designate my "Baking Zone", preferably near the ovens--with room to roll out dough, spread out cookie sheets, and have cookie cutters spread out all at the same time! The other thing I got from this site was our window...having the window down to the counter (OK, not cooking-related, but a very important design element!) Our very first plan that our KD came up with had input from us...but a very naive/ignorant us! (Before GW...BGW!) Then....I found this site.....and the changes began. Actually, I posted that original plan and asked for help (and also asked my KD to start over w/no island) Many, many people here helped me come up with a plan over several weeks (months?). We finally came up with a plan that has changed little since then. Interestingly, when I took away the island "must have", my KD came up with a plan very similar to what we came up with here. The only 3 differences were (1) no mini peninsula, (2) a 36" pantry cabinet rather than a corner pantry, and (3) no separate Message Center cabinets. My KD wasn't completely happy w/our differences, but she, wisely I thought, told me to go home and mock up what I wanted to see how it would work (same advice I got here!) Well, the mock up was great! It proved that I did indeed want the mini peninsula (I liked it so much I left the mock up in place until demo and used it!) When I told her the results, she didn't argue, she accepted it telling me it's my kitchen, so ultimately it's up to me. So in the end, my design was/is based on what I wanted, not what the KD wanted. [If only someone else had measured my kitchen and she was given more authority, I think a lot of subsequent problems would have been avoided.] Our kitchen isn't done yet, but it's close...so I can't yet tell you how it is going to work for us...but we are so...

The only place I can cook is home, and I never get bored at home because it's the only place I can do whatever wish. I get bored waiting for the bus but I can"t cook at the bus stop. If I get dejected at home and need to pick myself up I do something that would deject me anyway. The logic is that if I,m already in a bad mood I might as well do unpleasant tasks like sorting and filing documents or cleaning, which is necessary but boring. Sort of fight fire with fire. It works for me. Once I,m through with whatever burdensome task I feel better. I,d never cook when in a bad mood. Cooking is fun.

Always! I'm a decent cook, but I never make anything the same way twice. Only problem is that sometimes after tasting, I'm not hungry for dinner, but eat it anyway! LOL!

I'm like liljunker. If it's a new recipe, I will. I rarely add as much salt to a recipe if it has anything canned or salt-added ingredients like cheese, or it'll be too salty for us. Yesterday I made a pot of bean soup with ham and didn't add salt at all (2 lbs. of beans). We didn't need anymore but some people probably would.

Unless it is an oven dish or in a crockpot yes I usually do at least once mid way through.

Like lucky, I seldom make things exactly the same way twice, so I test. If I'm making black beans for example, I may put in serrano or japaleno and depending on the pepper, I better adjust the cayenne or it would be too hot for some folks to eat. I also find that when cooking with tomato products, the acidity can vary and I might adjust accordingly. If I'm making something with a recipe, I try really hard to make it as written the first time, but it is unlikely I'll make it again the same way unless it was perfect.

Yes, I always taste......no matter what you are using the taste is never the same, especially canned items. Even my home canned items......I always follow the recipe the first time and then if I want to experiment I will but the first time is exactly by the book........

I am always amazed at the people who look for or even ask for a recipe and you give it to them and they say , I made it exactly like the recipe except I used old bay instead of paprika, or flour instead of cornmeal or milk instead of water......I mean if you are going to make up your own recipe why ask me to go to the trouble of giving you my tried and true........

Yes, most times I do. But some dishes I am so confident with, that I don't have a recipe, nor do I "need to" taste before serving.

Yep. I do. And have DH taste as I go too because my 'taster' doesn't work so well and I tend to way over season things.

Only when I make my chili or soup. I like to make sure they taste just right. I don't bother with anything else.

Dpeends on what I'm making. Kind of hard to taste a turkey, roast, meatloaf, ribs or the like. Things like soup, stew or chili I usually test toward the end. Definitely will adjust seasonings then if need be. Or cuss at myself if I over seasoned it then have to decide what to do.

I always get a kick out of Gordon Ramsay screaming YOU"VE GOT TO TAAASTE!!!!

I lost my taste 6 years ago..I don't cook often but when the kids come in from out of state I have one of them to season things.

Yes indeed. When I try a new recipe the first time I follow exactly but make notes and changes as it fits my taste buds.
