Toffee--Too Hard!

Recently I went to a candy shop and bought some toffee and it was just heavenly, not too hard and no sticking to my teeth at all. I decided to make some of my own and this stuff could cause some major damage to dental work. I cooked it to 300 degrees. Some recipes said 285 and some 300. I went with the 300. There is no way I would let anyone eat this stuff--very hard. If I would have cooked to only 285, would that have made a difference? I really like toffee and would like to find a not too hard recipe.

I cook mine to 310-320 which is hard crack. I find that anything under that results in toffee that really sticks in your teeth. Also does your recipe have butter in it. That helps get a good melt in your mouth texture.

ginger St. Thomas receipe is 1 I've used for more than 20 yrs. Only mine says to melt butter in heavy pan-I use my 4 qt Presto pressure cooker bottom for all candy very heavy pan, much less likely to burn. Anyway melt butter add sugar until disolved, add Karo mix & stir over med. heat until it starts to boil. Add the Eagle Brand milk slowly while stirring so it continues to boil (won't sugar this way) stir & cook to soft ball stage 238% remove from heat add vanilla (& nuts if making candy) This takes about 8-10 minutes If candy pour into buttered 8 in. square glass dish(I don't use metal pans as candy sometimes continues "cooking" especially toffee gets too dark. (I make 8-10 kinds of candy each xmas as gifts for friends) If making carmel apples twirl in carmel. This candy freezes well after you wrap the squares. It is not a hard carmel like Kraft. I tried several receipes & this is best!! So just change the directions & you will have a nice carmel, it is soft so you can get all the apples done- no worry it will set up too fast. If apples don't set up refrigerate until set.

Here you go, Carolyn: Browned Butter Cardamom Cookies-4 dozen 1c Land 'O Lakes butter 3/4c sugar 1 egg yolk 1T vanilla 1/2 tsp cardamom 2c all purpose flour 1-2T milk (if nec. if dough is too dry) 1c powdered sugar Melt butter in a 2 qt heavy saucepan over medium heat. Cook, stirring constantly until just begins to brown (5-8 minutes). Immediately remove from heat, pour into bowl and refrigerate til cool. Preheat oven to 350Â°. Combine butter and sugar in a large bowl: beat til well mixed. Add yolk, vanilla, and cardamom. Add flour and beat til dough forms and no longer crumbly, adding milk if necessary. Shape dough into 1" balls and place on ungreased baking sheet. Bake for 10-12 minutes. (cookies will have cracks in them). Remove from baking sheets, cool 1 min then roll in powdered sugar and again when cool. Store between sheets of waxed paper in loosely covered container. From: Land 'O Lakes Cookies RL`

I forgot to add this in my last post: paint colors, you could look at a pale sage green or a pale steel blue. Both are cool colors that would contrast the warmth of the wood really well. But with these too, I would probably go with a counter top that is in the same color family as either the walls (green granite with complementing green paint, etc) or the woods (something like santa cecilia or new venetian gold, etc, that would pick up on the woods). I'm not sure how "Old World" either are, though... Otherwise, a pale buttery yellow might work too, but that might be more difficult to pick out something that fits with all the different stains, because it's a little closer. Finally, I don't think you could go wrong with an ivory color. And there are probably many beiges that would work too, although like the yellow, getting just the right one will take some work. (lslandler's paint color is subtle but really nice with the wood finishes.)

Granite to go with maple toffee glaze cabinets

Thanks a lot Folks! Really appreciate your suggestions. lgiorgi, Your kitchen looks awesome! Since we haven't bought the granite slabs yet, I was wondering if you have any other suggestions for the toffee glaze maple cabinets. Since this is my first time here I am not sure how to attach pictures, so I am sending the link from where we ordered the toffee glaze maple cabinets. http://www.allwoodfast.com.(Lancaster Toffee Glaze Maple). I cannot find a URL which has the exact same color of Cafe De Amazonia slab that we saw in our local store. The stone we saw has a lot of browns and some blacks specks too. If there is a way I can attach pictures, then I can so that. Pls do let me know if there are any other granite colors that will go well with this color cabinet. Thanks a lot!

My toffee also has some baking soda added just before you pour it....that makes it foam and adds a spongy texture...like peanut brittle so ti is easier to break.....and I cook it to 310 before I stir in the baking soda.

lindac--That's probably what gave the candy store toffee it's texture. I'll do that the next time. Wonder what I can do with this toffee? Too hard to eat as is. Wonder if I could pulverize and add to cookie dough?

yes add to cookie dough..or over ice cream...

love2, my recipe comes from a Betty C ...yes butter...and it is a touch sticky..but I love to suck on it. I guess I could drop the temp a touch. I think I'll try the recipe I linked to below too.

Almond Butter Crunch

1 c sugar
1 c butter
2 T water
1 T corn syrup
3/4 c chopped toasted almonds
1/2 c chocolate chips

Butter square 9x9 pan well. Heat sugar, butter, water and corn syrup to boiling in heavy pan over medium heat, stirring constantly. (I swirl it and only stir a little to get the "edges".) Cook, stirring, to 290F 12-15 minutes, (mixture will be light brown and thickened); remove from heat. Stir in almonds. Spread evenly into pan. Sprinkle with chocolate chips, cover and let chips soften. Spread them over the top. Let stand at room temp 3 hours until chocolate is firm.
I don't stir in the almonds..I sprinkle toasted sliced almonds on one half of the pan, over the just spread chocolate. I have also used almond meal sprinkled over a whole batch.

I cook the almonds in with the sugar etc.....that way they get toasted as they cook.

That's very similar to the recipe I use in my business. (We don't use corn syrup but you should. It inhibits the re-crystallization if you don't get every single sugar crystal incorporated into your syrup - you know those pesky crystals that cling to the side of your pan? yup - those:) )

We also do as Linda does and toss the almonds in once the sugar has melted. To prevent burnt almonds, go with almond SLIVERS, not chopped or sliced as those pieces tend to be too small and or thin and will burn at 310.

Try your recipe again and cook to 310-320. It really does make a difference in how easy it is to eat. Your candy, at hard crack, is actually MORE fragile and will shatter in your mouth easier and not be as chewy.
