Tricia, I made your Asian Peanut Sauce!

My daughter-in-law gave me a few stalks of lemon grass she purchased at the farmer's market, and I used them to flavor some Thai-inspired turkey meatballs. At first, I was going to simmer the meatballs in chicken broth & coconut milk flavored with red curry paste. But then I remembered how much my husband loved the peanut sauce from our favorite Vietnamese restaurant. (It's been at least 7 years since we ate there due to his sodium-restricted diet.) I also remembered I had copied a peanut sauce recipe from someone on the Cooking Forum and started looking for it.

Well, I found it, made it, served it, and we both loved it. One thing I especially liked was that it used natural peanut butter. (That's all I ever use now.) I also like that you can adjust the sweetness or hotness to suit your personal tastes. I was afraid of using too much of the red pepper flakes, so only put in 1/4 tsp. Next time, I won't be such a wimp.

I used unsalted peanut butter, low sodium chicken broth, super low sodium soy sauce (and I cut it down to just 2 tbsp.), and a very low sodium red curry paste from a local supermarket.

My husband liked it so much that he spooned some on the accompanying rice and even stir-fried snap peas. With all the low sodium ingredients, it fits into his diet but also packs a lot of flavor (something that's sorely needed when cooking low sodium). So, thanks a lot!

Peanut Dipping Sauce (amounts are approximate):
Triciae from CF

1/2 cup natural creamy peanut butter
1/4 cup low-sodium chicken broth
3 tablespoons low-sodium soy sauce
2 tablespoons brown sugar
2 tablespoons minced fresh ginger
2 tablespoons lime juice
1 teaspoon minced garlic (1 clove)
1/2 teaspoon chili flakes
1 teaspoon red curry paste
1 shallot, peeled and roughly chopped
1 green onion, thinly sliced for garnish on top of the sauce

Place all ingredients in blender and blend until smooth. I warm the sauce in the microwave...it may thicken a bit. If it's too thick, add more chicken broth.
