Great Pastry Cream for Baking

There are a lot of recipes for pastry cream out there but I bake Danish Braids and those I've tried before kinda fizzle out and end up being gunk when baked. This one will stand up to baking and tastes wonderful even after a week (though they must be wrapped airtight).

Pastry Cream for Baked Goods

With a hand held mixer blend on medium speed:

Two 8 oz. pkg cream cheese, softened

2/3 C white sugar

2 eggs

2 Tbs all-purpose flour, or for gluten free: 1 T garbanzo or garfava flour, 1/2 Tbs cornstarch, 1 t sugar, pinch of xanthan, pinch of salt, pinch of cream of tartar (all to equal 2 Tbs)

1 1/2 tsp almond extract or vanilla extract, or a mix of both.

Use immediately or put in refrigerator with plastic on the top to prevent skin from forming up to one week before use.
