7 lbs. of Homemade Kraut

Kraut is so easy to make. I wish I'd started making it a long time ago. With this batch [started on Monday] I ended up with 7 lbs. in the container with it smack full and no air on the top. That's the way you want it because the cabbage must stay under the kraut juice for it to ferment. I added a few juniper berries and caraway seed.

Recipes vary as to how much salt to use, anywhere from 3 tablespoons to a bit less than a tablespoon for a 5 lb. batch. I used 1/2 teaspoon per lb., guess I'll find out if I didn't use enough.
