Lars, I've not cooked frozen lobster in a couple of decades but, for fresh, I've learned that they're best if I par-boil them for about 2 minutes before halving & putting on the grill. That way, I'm sure they'll be cooked properly without having to leave on the grill very long. Once on the grill, I baste very simply with melted butter, a gulp of white wine, minced garlic, & fresh lemon juice. Sometimes, I'll add a bit of minced thyme and/or rosemary but just a tiny bit. Once grill marks appear (won't take long, just a couple minutes) I get them off the grill. I think you'll do best if the tails are thawed before grilling. Soak wrapped in a bowl of cool water to thaw. Enjoy! /tricia

Johnliu: I just came back and reread some of the Posts. Your thread on the Chinese using Chopsticks sounds right. I also heard many years ago, that you should remove the stomach, before freezing , or Gastric enzimes will be released, causing the meat to deteriorate quickly. Teresa_mn: I like your first Post. Often, do things like that but use oven bags and throw in a few tablespoons of Tomatoe Sauce and Garlic. LOU Lou�s - Crab and Shrimp cakes Ingredients One third cup each of chopped Onions, Peppers and Celery, micro waved 2 minutes. One half cup of bread crumbs 2 teasp. Parsley Flakes 1 teasp. Garlic Powder 2 teasp. Parmesan Cheese One half teasp. Old Bay Seasoning Mix the first 6 items , add 3 teasp. Mayo Three quarters teasp. Mustard Three quarters cup, cooked Shrimp, chopped medium 2 - 6 oz. cans of White Crab Meat or lump Crabmeat 1 large egg , beaten Made 5 cakes ( paddies ) Placed on Oiled aluminum foil in a cookie tin. Baked at 350 deg. For 30 minutes, basted with butter and baked 10 minutes more, or until Golden color. These were Baked a little too long. They were good with Creamy Italian Dressing

This is how I usually cook lobster tail: Broiled Lobster Tail Royale makes 4 servings 4 cold-water lobster tails in their shells, 6 - 7 oz. 1 cup unsalted butter 2 teaspoons finely minced garlic 2 tablespoons fresh lemon juice 2 tablespoons chopped fresh parsley Salt and freshly ground black pepper to taste Heat the broiler. With kitchen scissors, cut the upper shell of the each lobster tail down the center of the back, leaving the tail fan intact. Lift the uncooked tail meat through the slit so it rests on the shell. In a medium saucepan, melt the butter over medium heat. Add the garlic, lemon juice and parsley. Season with salt and pepper. Cook, without allowing the butter to brown, until the garlic is fragrant. Remove the heat and keep warm. Place the lobster tails on a broiler pan. Pour 2 tablespoons of the garlic-parsley butter to a small bowl and use it to brush on the lobster tails. Broil the tails, at least 6 inches from the heat, for 8 minutes, or until the meat is opaque and firm to the touch. (Note: It only took 6 minutes to cook my lobster.) To serve, place the lobster tails on 4 warmed plates. Divide the warm garlic-parsley butter among 4 ramekins and serve with the lobster for dipping. Procedures to Cook Frozen Lobster Tails Defrost the Lobster Tails The first step in cooking frozen lobster tails is to thaw the lobster completely. Defrosting is essential prior to cooking because it helps in maintaining the flavor of the lobster tails. You may cook lobster with ice intact, but the resultant meat will be less delicious than the one which has been thawed before. When you get the lobster tails from the market, keep them in the refrigerator for a day. Remember not to take out the lobster tails from the packaging before keeping in the refrigerator. After twenty four hours, the lobster tails will get defrosted. Another method to defrost the lobster tails is to keep them in water for some time. This is a quicker way to defrost them. While defrosting in water, keep the lobster tails in storage bags before immersing them in water so that the water does not reach the meat and render it tasteless. Some people even use an oven to defrost the lobster tails, but I personally will not recommend it as the lobster might lose its softness because of the heat in the oven. The best way to cook frozen lobster tails is by thawing it in a refrigerator overnight, before cooking. After the lobster tails have been thawed, you may choose any of the lobsters recipes to cook frozen lobster tails of your choice. Bake the Lobster Tails To cook frozen lobster tails which are baked, you have to use an oven. Start with pre-heating the oven to 400 degrees Fahrenheit. Meanwhile, wash the lobster tails with cold water, after they have been thawed, using the methods mentioned above. After washing and drying them, put them on a baking sheet. Now make a lengthwise cut on the shell in such a way that the meat is visible. Now keep the lobster tails for baking in the oven for about ten minutes. Take the meat out after ten minutes, sprinkle salt, pepper and some herbs such as oregano on top of it for taste. A scrumptious, tender, baked lobster tail is ready. Steam the Lobster Tails For cooking frozen lobster tails which are steamed, first of all clean the lobster tails with cold water so that the germs and bacteria are washed away. Once the lobster tails have been cleaned and dried, skewer the lobster tails before setting them up for steaming in a steamer. This is done so that the lobster tails do not curl upon steaming. Now put the lobster tails in the steamer and cook for about three minutes. Remember to leave enough space in between the lobsters while steaming so that they are cooked on all sides. Alternately you can make a sauce by mixing wine, cream and paprika and steam the lobster in it. After the steaming has been done, put the lobster tails under cold water for a while.
