Defrosted lobster tails

Yesterday at the market they had frozen lobster tails for cheap, and so I bought a package. It was partially defrosted, but instead of defrosting it fully myself, I decided to wait until today to have it. I've never cooked lobster before, and so I have no idea what to do with it. We're going to be barbequing in the back yard this afternoon (mainly chicken thighs, mushrooms, and zucchini), and I thought perhaps I could put the lobster tail on the barbeque, but I am afraid of drying it out. I thought I might wrap it in foil with butter to put on the grill.

Any suggestions for what I should do?

I've not cooked frozen lobster in a couple of decades but, for fresh, I've learned that they're best if I par-boil them for about 2 minutes before halving & putting on the grill. That way, I'm sure they'll be cooked properly without having to leave on the grill very long.

Once on the grill, I baste very simply with melted butter, a gulp of white wine, minced garlic, & fresh lemon juice. Sometimes, I'll add a bit of minced thyme and/or rosemary but just a tiny bit. Once grill marks appear (won't take long, just a couple minutes) I get them off the grill.

I think you'll do best if the tails are thawed before grilling. Soak wrapped in a bowl of cool water to thaw.

Thanks, Tricia! For some reason I thought it was already cooked, but when I looked at the package, I realized that it is raw!! I'll try your method - it looks good. BTW, I have Italian parsley in my yard, in addition to thyme, and so I think I might add parsley to it (as well as the garlic and white wine). I also like the idea of par-boiling for 2 minutes. If this works out, I might be buying them again in the future. I don't have lemons on my tree yet (except for very tiny ones), but I do have lemons in the fridge. I've always wanted to cook lobster, but not a whole one, and finally the tails were at a price I could live with.

Crafty, I am so glad! It was a new recipe so I was worried! DH loved it - I decided I prefer it plain - LOL. I was thinking the same as you - using the recipe for other seafood. I used 8 ounce tails and it was very filling - we had also made shell steaks. We ended up splitting a steak. Talk about cholesterol! I liked the method of boiling from frozen - I have turned them to rubber before and it is an expensive mistake! Jankey here is the recipe - it is from Pillsbury Family Christmas cookbook I had checked out of the library. Deviled Lobster Tails 2 teaspoons Salt 4 (about 10 oz each) frozen Lobster Tails 4 tablespoons Butter 4 Green Onions, sliced 2 tablespoons Flour 1 1/2 cups Half and Half 1/4 cup Cocktail Sauce 2 teaspoons Worcestershire Sauce 1 teaspoon Dry Mustard 1/2 teaspoon Salt 1/2 teaspoon Hot Pepper Sauce 1/3 cup unseasoned Dry Bread Crumbs Bring water to boil with 2 teaspoons of salt. Add lobster tails; return to boil. Cook 8 to 10 minutes or until lobster shells turn red and meat is opaque. Immediately plunge lobster tails into cold water to stop cooking. Lobster will not be thoroughly cooked, but will continue to cook during baking step. Heat oven to 450 degrees. Melt butter in medium saucepan; add onions and cook about 2 minutes. Add flour; cook and stir until mixture is smooth and bubbly. Gradually add half and half, stirring constantly. Bring to boil. Cook 1 minute, stirring constantly. Add cocktail sauce, Worcestershire sauce, dry mustard, 1/2 teaspoon salt and the hot pepper sauce; mix well. Remove from heat. With kitchen scissors, cut and remove membrane from under side of each lobster tail - discard. Remove lobster meat; cut into chunks (reserve shell). Add meat to sauce and mix well. Return mixture to shells. Place on ungreased baking sheet - place small crumbled pieces of foil between tails if they look like they will tip over. Melt remaining 2 tablespoons butter and add the bread crumbs; mix well. Sprinkle over lobster mixture. Bake at 450 for 10 minutes or until thoroughly heated and bread crumbs are brown.

I got no impression of shaming in your post, pkramer. My first reaction to the idea of a shelled lobster was incredulity...why would someone pay extra for that?? But you brought up a very good point. There are physical ailments and conditions that would make cracking & digging difficult if not downright impossible for many folks. Due to a vertebra problem, I went through a period when I could not even tie my own shoes, gripping anything small was so painful. Had I been given a lobster or crab at that point, I would have had to ask my husband to crack it for me. Linda made a good point too, about younger people who have never learned to deal with a lobster, although I would suggest that it may not be as much a matter of not wanting to learn as a matter of 'so much to learn, so little time.' Young people who grew up without being taught how to cook have to learn everything on their own. And if you're working full time (perhaps with a long commute), trying to have time with your kids and spouse and yet put decent meals on the table instead of succumbing to the lure of quick, easy, crappy packaged or junk foods, taking the time to learn how to extract the meat from a lobster might be low on the priority list. Personally, I don't think I'd use the product, not just for the expense but because the shell has a lot of flavor. No, I don't eat the shell, :D , but it does impart some of that flavor to the meat during cooking. AND, what would I make bisque out of???

Lobster fondue in a bread bowl. Then call and I'll be right over. Red Lobster - Lobster Fondue Servings: 4-6 * 16 ounces Velveeta cheese * 1/2 cup milk * 1/2 teaspoon cayenne pepper * 1/2 teaspoon paprika * 1/4 lb broil lobster tails or 1/4 lb broiled crawfish tail meat * 1/2 cup chopped sweet red pepper * 2 tablespoons fresh parsley, chopped * 1 loaf round sourdough French bread Directions: Prep Time: 10 mins Total Time: 25 mins 1 Take the cap off the bread and hollow it out being careful to do it in chunks you can serve with the fondue. 2 Spray the inside of the bowl and extra pieces of bread with light olive oil and broil till golden. 3 Combine all other ingredients except red pepper and parsley in a sauce pan (if you are subbing with crab don't add here or it will lose it's lumps). 4 Heat on medium low till cheese is melted. 5 Stir in pepper (and crab if using). 6 Pour as much as will fit into bread bowl. 7 Garnish with parsley and serve hot with fondue forks. 8 You will need a bread knife to cut the bread bowl up into chunks toward the end.

This is how I usually cook lobster tail: Broiled Lobster Tail Royale makes 4 servings 4 cold-water lobster tails in their shells, 6 - 7 oz. 1 cup unsalted butter 2 teaspoons finely minced garlic 2 tablespoons fresh lemon juice 2 tablespoons chopped fresh parsley Salt and freshly ground black pepper to taste Heat the broiler. With kitchen scissors, cut the upper shell of the each lobster tail down the center of the back, leaving the tail fan intact. Lift the uncooked tail meat through the slit so it rests on the shell. In a medium saucepan, melt the butter over medium heat. Add the garlic, lemon juice and parsley. Season with salt and pepper. Cook, without allowing the butter to brown, until the garlic is fragrant. Remove the heat and keep warm. Place the lobster tails on a broiler pan. Pour 2 tablespoons of the garlic-parsley butter to a small bowl and use it to brush on the lobster tails. Broil the tails, at least 6 inches from the heat, for 8 minutes, or until the meat is opaque and firm to the touch. (Note: It only took 6 minutes to cook my lobster.) To serve, place the lobster tails on 4 warmed plates. Divide the warm garlic-parsley butter among 4 ramekins and serve with the lobster for dipping. Lars, if you've got wooden skewers use them after you've cut the tails & before putting on the grill. It will keep them from curling. They're not in the boiling water long enough that you can't flatten them out to half & place the skewer thru the tail. Just par-boil a couple minutes...you're just making sure they're done without drying them out on the grill.

The parsley is a great choice. Rosemary can overpower seafood, IMO. I want to taste the lobster, shrimp, etc.

Thanks again. We do have wooden skewers. Kevin had to go out to buy charcoal, and so we haven't started that yet. It's liable to get dark before we finish, but at least we have outdoor lighting.

I wouldn't have thought about the tails curling. BTW, we also have metal skewers that we normally use for the vegetables.
