Cheddar cheese soup with vegetable bake?

I need to make this for tomorrows work potluck and figured I could find the recipe on the net easily. But all the ones I find seem to be cream of mushroom soup recipes.

What I've had is a mix of carrots, califower, broccoli and celery

I know cheddar soup was used and cheese on top and baked.

So....is it.......?

Put some milk and a little water in the soup,

put vegetables in casserole dish

pour soup mixture over

put shredded cheese on top and bake at 350

Or should I wait to put the shredded cheese on top to make sure the vegetables cook long enough to get soft?

And I only have half and half, how much water?

I feel like a putz

I cut up the veggies and put the onions ( I use onion) in a heavy pan I use my 8 qt Le Cruset and brown in 1/2 a stick of butter.....when all moisture has evaporated. add 1/4 cup of of flour and cook 1 minute...add 2 cups of chicken broth and cook, sturring to remove lumps until flour thickens a bit.
Add your steamed or roasted veggies, and 2 cups of milk....simmer ( do NOT boil!) gently for about 20 minutes and gently stir in 2 cups of grated sharp chedder...2 tsps worchestershire sauce, 1/2 tsp Coleman's dry mustard ( or 2 tsps prepared grey poupon mustard) and stir and heat gently until smooth.
Check for salt...I don't think it will need any but you may.

I have one too, thick, chunky and cheesy, but no beer. From Midwest living. The potato bar worked out very well. I left shopping and prepping of the potatoes and other vegetables mainly to my son and husband so we had about twice as much as we needed for dinner. But that's okay - the leftovers will be used and some is disappearing in the snacking as they play. I started from an apple cider cheddar cheese fondue recipe for the cheese sauce (link below) but made some modifications. I got a hard dry cider for this partly because in my experience with grueyer fondue, the cheese melts better in an acid liquid. I also diced the cheese and tossed it with the flour because that helps keep the cheese from clumping. I added smoked paprika instead of chili powder. Cilantro butter was pretty easy to put together and added a nice touch to the flavor: Cilantro butter 3/4 cups firmly packed cilantro leaves 1 stick (1/4 cup) butter Pinch of salt Pinch of pepper Process in food processor until fully creamed. We had shredded parmesean and cheddar cheeses. Mild and hot salsa (the fresh stuff from the refrigerator section at the market Steamed broccoli and carrots, Diced green pepper and green onions Chana Masala (cilantro butter was really nice with this too) Yogurt and sour cream (separately - not mixed together Taco flavor smart ground Tortilla chips for grazing through the evening with the toppings or in case a potato hater wanted to have nachos instead. Beer cheese soup: 1/2 stick butter ( 4 T.) 1/4 cup EACH finely chopped onion, celery carrots and bell pepper Sweat the veggies in the butter until no longer crisp, don't brown. Add 4 T flour Stir and cook one minute. Slowly add 1 can, 14 oz chicken broth ( home made is better if you have some) stirring to prevent lumps. Simmer 3 minutes to cook the flour. Add 1 cup beer ( not lite...and not dark...just a good lager) If you like a really thick soup... mix 1 T ( more if you like it really REALLY thick) cornstarch with a cup of milk, add to soup and bring to a simmer. If you don't like your soup so thick, just add 1 cup milk, no cornstarch. Add 1 tsp worchestershire sayce Add 2 cups grated very sharp chedder./...Cabot or Vermont is good....2 cups will be about 8 oz. Toss the cheese with 1/2 tsp Coleman's dry mustard. This is our favorite.......can't begin to tell you how good it is! THE ULTIMATE MAC & CHEESE 12 tablespoons (1 1/2 sticks) unsalted butter 3 cups good quality white crusty bread, cut into 1/4 inch pieces 1 qt. (4 cups) half & half 1 cup milk 1/2 cup flour 2 tsp salt 1 tsp freshly ground black pepper 1/2 tsp red pepper flakes 1 tsp garlic powder 1/4 tsp freshly grated nutmeg 2 cups vintage white cheddar cheese, shredded 2 cups sharp cheddar cheese, shredded 2 cups Swiss cheese, shredded 1 1/4 cup Parmesan cheese, shredded 1 pound large macaroni with grooves Preheat oven to 325 F. Butter and set aside a 9x13 casserole dish. Place bread in a bowl. Melt 4 Tbsp butter and 1/2 tsp garlic powder. Pour butter into the bowl with the bread and toss to combine. Set breadcrumbs aside. Melt 6 Tbsp butter in a large saucepan over med heat. When butter melts, add flour. Cook, whisking 1 minute. While whisking, slowly pour in milk and half and half and add 1 1/2 tsp salt, 1/2 tsp pepper, 1/2 tsp red pepper, 1/2 tsp garlic powder, and nutmeg. Continue cooking, whisking constantly, until the mixture bubbles and becomes thick. Remove pan from heat. I wanted to say thanks for chiming in.
Here's what I did and it was about right.
Take a can of cheddar cheese soup, add milk or cream, maybe 1/2 a can (I also added some pepper)
You can cook that per directions or just wisk it together.
Pre cook your harder vegetables slightly the carrots, califlower and celery, maybe the broccoli just a tiny bit.
Arrange the vegetables in your casserole dish, add the soup mixture evenly, sprinkle generous amounts of cheddar cheese on top. Sprinkle with sesame seeds if you have them.
Bake till bubbly at 350 or so.
I finished with a little bit of broiling to brown up the cheese just a bit.
Pretty easy and tastes pretty good.

I think so. Not for the sophisticated maybe but certainly a good way to get veggies out there, espeically for kids. Not truly healthy of course. I think I'm going to skip the celery next time though. I don't like it as much as the other 3 so why included it?:)
