Family Christmas Buffet

For the most part our buffet menu is set for this Sunday's Family Christmas-- we should have 38 adults, + give or take a few drop in friends. & 15 kids between the ages of 2 &

16--- plus we have lots of snow so that means a zillion sleds, snowboards & a couple snowmobiles !

Buffet:

Shrimp & cocktail sauce

Humus & pita wedges

Warm spinach & artichoke dip

Cheeses & various crackers

Smoked Turkey- ( DH doing )

Venison Italian sausage , peppers & onions

French Dip Beef

Roast fresh polish sausage

Veggie egg rolls

Won-ton pizza rolls

Deviled eggs

Spinach & 5 cheese puff pastries

Twist pasta salad with ripe olives & salami

Gorgonzola & Honey Pear En Croute Salad

Unknown vegetarian dish oldest DD is bringing

Copper Pennies

Baked Beans

Garlic Knots

Kimmelweck rolls

Various quick breads

Apple crisp( DIL decided to do crisp instead of pies)

Cheesecake

Various Cookies

Ann's Sticky Toffee Pudding

Raspberry Almond tarts

OLives, pickles, Rosemary pickled green beans

And Saturday morning have to do 3 dried beef dip bread bowls-- 2 for fire dept X-mas party-- along with an Italian Love cake they shamed me into making-

1 bread dip going to get together @ oldest DS's house for his other side in-laws-- then it's Christmas eve dinner with Pat & Sweeney at Sweeney's Mom's-- following that

Midnight Mass & meal at SIL's house with all Doc's brothers, sisters, nephews , nieces etc.

Christmas Day-- just DH & I -- Prime rib , an onion Yorkshire Pudding, asparagus-- DH's cooking -- hurrah !

but I really must interrupt and ask for Ann's Sticky Toffee Pudding recipe! Pretty please!!

My husband and I fell in love with it last summer in Scotland and I havena been able to find a decent recipe online (I think I've tried 3 different ones). They all come out rather light in color and dryish in texture when the ones I had in Scotland were a gorgeous, moist, deep dark brown.

The best version I had was on Skye and according to the menu, it had beer in it! I've got a big ol' bag of dates just waiting to become pudding...though my thighs really don't need it...

Diane, sounds like another great family gathering! I remember when I first tried the yorkshire puddings for the frist time thanks to this forum. It was Ann, CindyNY, and Sharon that shared their recipes and tips. Cindy posted a pick of a big one in a 9 x 13 inch pan....I'm guessing you would just add enough drippings from the steak to coat the pan very well..1/8 of an inch??,,,heat it up in the oven and then add the batter....I remember it rising up along the sides of the pan and being somewhat less on the bottom....just like it should for the most part if you made individual ones. I would do this method for a big group....even it they have to wait for a second pan of them depending upon how many ovens you have. Diane, How about a traditional Sticky Toffee Pudding? That is what I intend to serve again this year. I cut it out in rounds to serve, but you can also serve it sliced. Home Cookin Chapter: Recipes From Thibeault's Table Sticky Toffee Dessert ===================== Source: Vancouver Cooks - Chef Rolf Gunter from Rim Rock Cafe & Oyster Bar 1 cup whipping cream 1 1/4 cups unsalted butter 2 1/4 cups brown sugar 6 oz. Pitted dates 1 tsp baking soda 1 1/4 cups boiling water 1 tsp vanilla 1 egg 1 1/2 cups all purpose flour 1 1/2 tsp. Baking powder NOTE: I used Medjool Dates . This comforting Pudding lives up to its name! For an extra touch, garnish dessert with a drizzle of chocolate sauce. Serves 6 to 8. Note: I used my Caramel sauce over this dessert. Preheat the oven to 350Â°F. Line an 8 inch springform pan with aluminum foil and butter it well. Place cream, 1 cup of of the butter and 1 3/4 cups of the brown sugar in a saucepan on medium heat. Boil for 5 minutes, until the sauce begins to turn brown and thicken slightly. Pour half into the springform pan. Save the rest of the sauce. Place dates and baking soda in a bowl. Add boiling water, mix and let cool. Place the remaining butter , the remaining sugar and vanilla in an electric mixer. Beat on medium high for about 5 minutes, until well creamed. Your boyfriend should put the NEEDS of his child first. But, what he's telling you is that he's going to put his child's WANTS first. A child's wants do not need to always come first and, in fact, they shouldn't. Your wants are just as intrinsically valid as those of your boyfriend's child, but your boyfriend is telling you that they aren't, probably to get what he wants. He'll continue to treat you this way in the future. If you continue on in a relationship where your wants and maybe even your needs are always going to come second to a child's WANTS (with a man who will also try to get his way by saying it's what his child wants)...this does not bode well for you and for the relationship. The needs of children need to come first. Not their wants. Having said all that...you're not married to this man. I don't think boyfriend/girlfriend relationships should disrupt anyone's Christmas plans. I think you should spend Christmas with your family and he should spend it with his, until you're at least engaged. Why should a child have to spend Christmas without his family because his dad has a girlfriend?

Big dinners: family style or buffet line?

For many years I did a lot of entertaining: large business parties for my husbands colleagues (up to 80), our California family (15 t0 30), traditional family parties (15 - 18) and many weekend dinners for our friends of my sons friends. The large parties were served buffet style with seats indoors and out. Family traditional parties were part served and part buffet. Two weddings (200 and 100 each) were catered by my sister and her dear friends. Both are gourmet cooks and members of an international group and the dinners were a smash. They brought a 60 lb. fresh frozen king salmon and barbecued it right on the patio. Salad and sides were beautiful as well as delicious. The fish took up the entire grill! Our family and traditional meals were a group effort. The menu was - and still is - selected by the hostess and assignments are given depending on the skills of the contributing cooks. This gives the vegetarians and fussy eaters the opportunity to prepare and bring what suits their diets and others can try their selections as well. Some times we would have place markers for each guest and other times it would be much more casual. When the kids were small, we would decorate fall leaves and then write a name of one guest and place on the salad plate. We did these meals buffet style and of course helped anyone who could not navigate with a plate in hand. Adults migrated to one table, the teens at theirs and the kids would have a kids table to everyone had a great time. Everyone felt at home and helped serve, clean up, do dishes and put the tables away at the end of the evening. It was always a treat to have a family dinner and wake up in the morning to a tidy house!

What an amazing spread!! How lucky you are Diane to have your whole family together in one place. You are so blessed.

I'm thinkin' that Christmas day , just the two of you and that prime rib may be pretty special too.

Here's Ann's Sticky Toffee Pudding.

Sticky Toffee Dessert
=====================
Source: Vancouver Cooks - Chef Rolf Gunter from Rim Rock Cafe & Oyster Bar

1 cup whipping cream
1Â¼ cups unsalted butter
2Â¼ cups brown sugar
6 oz. Pitted dates
1 tsp baking soda
1Â¼ cups boiling water
1 tsp vanilla
1 egg
1Â½ cups all-purpose flour
1Â½ tsp. Baking powder

NOTE: I used Medjool Dates

This comforting Pudding lives up to its name! For an extra touch, garnish dessert with a drizzle of chocolate sauce. Serves 6 to 8.

Note: I used my Caramel sauce over this dessert.

Preheat the oven to 350Â°F. Line an 8 inch springform pan with aluminum foil and butter it well.
