Anyone have a T & T ' Figgy Pudding' recipe?

Looking for another dessert for our Family Christmas Buffet-- one of the DD's is doing a choc Noel log, I'm doing Brandy Creme Burlee Bars & they'll be a zillion cookies,one DIL is bringing Apple pies, one GGD is bringing rum raisin ice cream. With 38 adults & 15 kids of all ages we need a good variety . Would like to try something real traditional, something different to most of us, like a steamed pudding -- help ??

Diane, How about a traditional Sticky Toffee Pudding? That is what I intend to serve again this year.

I cut it out in rounds to serve, but you can also serve it sliced.

Sticky Toffee Dessert

1 cup whipping cream
1 1/4 cups unsalted butter
2 1/4 cups brown sugar
6 oz. Pitted dates
1 tsp baking soda
1 1/4 cups boiling water
1 tsp vanilla
1 egg
1 1/2 cups all purpose flour
1 1/2 tsp. Baking powder

NOTE: I used Medjool Dates

. This comforting Pudding lives up to its name! For an extra touch,
garnish dessert with a drizzle of chocolate sauce. Serves 6 to 8.

Note: I used my Caramel sauce over this dessert.

Preheat the oven to 350Â°F. Line an 8 inch springform pan with
aluminum foil and butter it well.

Place cream, 1 cup of of the butter and 1 3/4 cups of the brown sugar
in a saucepan on medium heat. Boil for 5 minutes, until the sauce
begins to turn brown and thicken slightly. Pour half into the
springform pan. Save the rest of the sauce.

Place dates and baking soda in a bowl. Add boiling water, mix and let
cool.

Place the remaining butter , the remaining sugar and vanilla in an
electric mixer. Beat on medium high for about 5 minutes, until well
creamed. Beat in the egg, then stir in the date mixture.

Combine flour and baking powder in a bowl. Fold into the egg mixture
until evenly incorporated. Pour into the springform pan and bake in
the oven for 30 minutes. Turn down the oven to 300Â°F and bake for 60
minutes, until golden brown and firm when touched lightly.

To serve: unmould the pudding, slice it and place on individual
plates. Drizzle with the warmed reserved sauce.

NOTE: I found that this cake cooked much quicker than the time called
for in the recipe. I baked it for 30 minutes at 350Â°F and then for
another 20 to 25 minutes at 300Â°F.

Caramel Sauce
=============
Caramel Sauce

1 cup butter
1 cup sugar
1 cup brown sugar
1 cup cream
pinch of salt
2 teaspoons vanilla
. Mix all the ingredients together and simmer for about 5 or 6 minutes.

Serve over Bread and butter pudding, apple pie and icecream, warm
gingerbread, etc..

NPR did a story on Figgy Pudding just tonight, with Dorie Greenspan. I didn't have time to listen to the whole story and recipe, but I did find the story on their website.

I like this one, it's the most like the good Brunswick Stew we ate many, many years ago at our favorite BBQ place in Durham, NC. It calls for chicken or squirrel or rabbit, but I only ever used chicken, as well as pork or beef. It's from my old Fannie Farmer cook book. Brunswick Stew Vary this famous Southern dish in many ways. It is often made in huge quantities for an out-of-doors get-together and can be made of squirrel and rabbit as well as stewing chicken. Sometimes pork spare-ribs and pieces of stewing beef are cooked with the chicken, and other vegetables are added, such as green beans, okra, diced potatoes and peas. Cover with boiling water 1 stewing chicken, cut in pieces Cover and let simmer over low heat for 45 minutes. Add 2 teaspoons salt Cover and continue cooking until tender (about another 45 minutes). Take out the pieces of chicken. Remove the bones and cut the meat in l-inch pieces. Put back in the kettle and add l can condensed tomato soup, 8 tomatoes or l cup canned tomatoes (I use diced tomatoes) 1 onion, sliced thin l cup green lima beans 3 potatoes, sliced thin l tablespoon sugar Salt and pepper Cook until the beans and potatoes are tender. Add 1 cup corn, cut from the cob, or canned whole-kernel corn 1/4 pound butter Cook 5 minutes. Serves 6 to 8.

5-spice is not a traditional ingredient in char siu. It isn't thought to go well with pork, Chinese prefer to use it with beef and occasionally, poultry. I use the already-pkg'ed chunky strips of boneless pork butt (shoulder or blade, as it's called in some regions). They're about 2" wide x tall, and about 10-12" long. Good proportion of fat to lean, which is critical in Chinese cooking. You can get pretty much the same effect by using one of the good quality sesame teriyaki marinades, like Soy Vey or Trader Joe's. Marinate for a day, and grill it on the barbecue, gas or charcoal. The flavor is infinitely better than roasting or broiling. Grills vary so much I think times will vary considerably, but mine take about 6 min on each side, medium-high heat.

Here is the "Original Nilla Wafers Banana Pudding." I still have this recipe that I cut from the back of the box of wafers many years ago. NILLA WAFERS ORIGINAL BANANA PUDDING 3/4 c. granulated sugar 1/3 c. all-purpose flour Dash of salt 4 eggs, separated, at room temperature 2 c. milk 1/2 tsp. vanilla extract 35 to 45 Nilla Wafers 5 to 6 med. size fully ripe bananas, sliced (reserve 1 banana and 10-12 wafers for garnish*.) Combine 1/2 cup sugar, flour and salt in top of double boiler. Stir in 4 egg yolks and milk; blend well. Cook, uncovered, over boiling water, stirring constantly until thickened. Reduce heat and cook, stirring occasionally, for 5 minutes. Remove from heat; add vanilla. Spread small amount on bottom of 1 1/2 quart casserole; cover with layer of Nilla Wafers. Top with layer of sliced bananas. Pour about 1/3 of the custard over bananas. Continue to layer wafers, bananas and custard to make 3 layers each, ending with custard. Beat egg whites until stiff but not dry; gradually add remaining 1/4 cup sugar and beat until stiff peaks form. Spoon on top of pudding, spreading to cover entire surface and sealing well to edges. Bake at 425 degrees for 5 minutes or until delicately browned. Cool slightly or chill. If you have some kind of new sauce pan you can probably cook the pudding okay, but it will scorch easily. Better to use a double boiler. *I don't do the garnish, and I think the pudding is not complete without the meringue. Instant pudding ... no way! This is a classic dessert and should not be tampered with. Sue
