Is there an easier way to make pureed soup?

I love pureed vegetable soups but I hate making them. Usually I steam the vegetables until soft and then put them in the food processor until they become a smooth, thick paste. Then it's back to the pot and I thin the vegetable mixture with chicken stock until it's the consistency I want.

Will an immersion blender be able to puree the vegetables in the pot smoothly or is chunky the best it can do? I'd like to save time, clean up and mess. But I don't want to waste money on an appliance that can't do the job. Is there an immersion blender out there that can do it? Does it need any special features or attachments? Or should I just stick with way I've been doing it?

I use a stick blender to puree the vegetables in the pot and I am pleased with the results.

I don't have anything fancy, just a Kitchen Aid 9 speed.

Yes an immersion blender is what you need and they do a great job. Cook your soup until veggies are tender then stick the "boat motor" as emeril calls it in the pot and you can make it as chunky or as smooth as you like. They aren't very expensive and they are very easy to clean.

Actually with manure, you need to know what the horses are eating. If they are on an all alfalfa diet (hay or pellets or cubes), their manure is heaven, and should create no weeds. If they are eating grain hay - wheat, barley, rye, oat, etc - these grains will regrow from the manure. Not sure about a diet of grass/grass hay as we don't feed it. If the horse ranch already feeds a vitamin supplement, you wouldn't need the calf manna (which is just one of a zillion horse supplements). I've never heard of adding horse vitamins as rose amendments (?) Pure composted alfalfa based manure as compost is awesome in and of itself. I'd guess that making a tea from horse manure from any diet - again even without additives, would not create a weed problem and be beneficial.

I don't think your respective ages have anything to do with it -- I do suspect your neighbors either were lucky enough to have better soil in the beds or did considerably more preparation work. I will always recommend the lasagna method to make a long-term improvement in the soil, but your plants need help at once. Their problem is likely that clay soil does not drain well, and -other than bog-lovers- most plants want drainage, else their roots don't get enough air and eventually either rot or succumb to a disease. I hate to say this, but it's better done now than later: dig up the plants, remove most of the good soil from the hole. Next, widen the holes to the expected root-spread of the mature plant (that means that a bush which will be about 3' wide when grown up, will do best if the soil is 'fixed' to a matching width of 3 feet). BTW, this isn't true for every perennial, just the majority of them! You can mix the clay stuff into the good soil as long as you have 3 times as much good as there is clay. Now, put down pea gravel to about 3 inches depth of in the bottom of the 12" deep hole. Amend the removed soil with a heaping shovel-full of perlite added to each wheelbarrow load of soil (that's about a double-handful of perlite to a laundry-basket sized pile of soil) and/or add gypsum (as recommended on the bag). Both perlite and gypsum will aid drainage and help prevent the soil from clumping into clay-ey lumps. Now you can re-plant and replace the soil. You will likely find that the finished bed is higher than the lawn. This is good, because the soil will let excess rain drain onto the lawn -- and if the bed is beside the house, be sure that the surface slopes *away* from the house. I highly recommend using 3" of an organic mulch around the plants: it will prevent weeds, help the soil retain moisture through dry spells, and act somewhat like a sponge in holding water for slow release rather letting downpours wash your good soil into the ditch - and the mulch itself eventually turns into a nutritious soil. Ah, and be sure your plants are suitable for your climate, soil, and available sunlight! Shade-lovin plants won't do well in full sun, and sun-lovers won't do well in shade, no matter how good the soil. You can plant bulbs (such as lilies) now and enjoy them for years with little more effort. Choose un-fussy annuals for ease of maintenance, and intersperse with zonal geraniums [pelagoniums] for a great show of bloom by very easy-to-live-with plants. Water the plants any week that there isn't an inch of rain, and smile back at your neighbors.

OK, don't panic about the oxalic acid, other more common greens have it too, like lambsquarters, beet leaves, spinach, swiss chard (leaves & stalks), rhubarb, and parsley. All things I like. Moderation is key, unless you have problems with calcium absorption or kidney stones. I just finished the batch, it is pretty yummy, and I can see why people liked it in the spring, because back in the day lemons weren't commonly available. The stuff looks like something you would need to clean off of the aquarium though. I very vaguely followed a recipe for "Saint Bertille Herb Soup" from a cookbook called "Twelve Months of Monastery Soups" by Brother Victor-Antoine d'Avila-Latourette. (What a name!) I love the book, got if for Christmas one year. The actual recipe sounds good too. It calls for lettuce, parsley, watercress, scallions and chervil, none of which I used, lol! I sort of subbed the herbs I had, and some wild onion bulbs from the yard and some dried chives and dried chervil. And the juice of a wrinkly lemon. The combo of bolted cilantro and the tartness of the sorrel was good. Also in there was thyme prunings and dill volunteers, along with some dandelion greens and some frozen spinach. I also didn't have cream so used 2% milk and lite cream cheese mixed. Also added one yellow potato. Saint Bertille Herb Soup - from "Twelve Months of Monastery Cooking" 1 small head leaf lettuce 1 bunch sorrel 1 cup chopped parsley 10 scallions or 2 leeks 1 bunch watercress butter 1 1/2 quarts vegetable stock 1 cup white wine 1/2 cup heavy cream or half and half 1 egg yolk, beaten 1/2 cup chervil salt and pepper to taste Shred the lettuce and the sorrel. Chop the parsley, scallions and watercress into small pieces. Melt the butter in the soup pot, add the chopped greens and cook slowly for a few minutes over low heat. Stir continually. Add the stock and the wine. Cover the pot and cook for about 40 min. Remove the pot from the heat, add the cream, beaten egg white, chervil, salt and pepper. Blend well in a blender. Reheat the soup for a few mintues, but do not allow it to boil. Refrigerate the soup and serve cold. Or it can be served hot with slices of French bread on the side. Note: I pureed the soup in the pot with a hand blender. I mixed the egg and milk together, and then slowly added 1 cup of the broth to that mixture. Then I slowly drizzled the egg mixture into the warm soup. I cooked it on low to cook the egg for about 10 min. It didn't curdle! I will be eating this hot, as I can't abide by cold soup for some reason. Gazpacho and cucumber are all I have been able to stomache.

The Fall season is stocklandia in our home. Starting in Sept. and cooler weather I have stocks near once a week on the back right burner...roasted bones, veg, fish, chicken, and of course turkey the night of Thanksgiving. We go through it quickly making soups and chowders 2-3 times a week all winter. Turkey stock is pretty special. Nothing compares, and being just once/twice a year, we look forward to such a rich savory broth. And the soup it makes the next day for a lighter meal. ...after potato cakes, breakfast stuffing/roasted veg hash, brunch turkey sandwiches... Leftover turkey and the picked carcas meat goes into a glass pyrex then into the fridge. Carcas bones, quick rough chopped onion, celery, parsley, carrot, leek tops, bay leaves, peppercorns, thyme bunch/full stems, into stockpot to just barely cover and to a boil, then down to a simmer. 3 hour minimum, 4 hours good. No timer set. I refuse to be a slave to any stock. Has to fit my schedule. --(Fish stock minimum 1 hour, 2 is fine. Chicken 2-3 hours, 4 is fine. Veg 1-2 hours. Roasted bone broth ?, 4 minimum, 6-8 is great.) Lid off, rest a bit, ladle off and garbage larger mass, strain stock through big mesh thing, cool as quick as possible over an ice bath and some ice into the broth. (so rich, that is a minor dilute). Into the fridge. Soak overnight a bag of white beans. I always have a massive amount of leftover fresh veg and root veg from all my sides. Mirepoix, minced celery, shallot, garlic, till translucent, diced veg and root veg till med-soft/firm, add stock to cover for 1/2 hour. Chiffonade greens,... kale, collards, escarole. Into 3 one quart cups, I add a fistful greens, some cold turkey meat, cold cooked white beans, ladle of simmering broth and veg, cold stock to cover...into fridge to chill, then into the freezer. Really nice thick jellied stock this year. Minimal fat layer. What's left on the stove is soup for two-four...add some white beans, greens till tender. What is left of the pure cold stock goes into pint containers and into the freezer...this year I had six. Unused cold white beans I made a pesto and kale salad for next day lunch. We like brothy soups. Just a preference. Some times chowders I stick-blend a bit to add some thickness before adding seafood,...never flour-thick. Still quite thin.

Yep I have the Cusinart and just finished doing my potato soup. I actually do it in the pot and still leave some of it chunky , like I did with the vegetable soup the other night and pureed the butternut squash soup in the pot till it was smooth. Tonight with the potato soup I removed some of the potatoes to puree them and then added them back in so that there were some cubes of potato still in evidence. Either way the stick blended is fantastic !

Just be careful when you buy one, that it can be used in HOT mixtures. I bought one once, and when I got it home, and read the instructions, it said it wasn't to be used in hot stuff--and they meant it--I ignored that instruction, and it died the first time I used it.

My wife bought me a nice Bamix Professional Immersion Blender a couple years ago when they were on sale. Works great for soups.

Another KA stick owner here. I find it does a decent job of most soups and sauces. If I want a really smooth puree, I use my regular blender, then strain through a fine sieve.

If you have the budget, consider one of those high-end high power blenders.

They will make true smooth puree out from uncooked vegetables, in addition, the rotational power is so high, the puree actually gets hot by the friction created from the rotation, and you will have cooked soup/puree right in the blender.

Stick blender, nothing fancy, I think it is a Braun. I love it. My kids won't eat spaghetti if the sauce has any lumps, stick blender to the rescue! And, they are not babies either two big tween boys.
Not complaining though, they love all their greens!

One thing I was told by an appliance technician, is that you should not tap the stick blender on the side of the pot to dislodge any clinging puree. After heavy use the motor is hot and the (plastic) bushings the keep the shaft straight in its housing are warm, and tapping makes the metal shaft move back and forth and slightly deform the softened bushings. Enough of this and the shaft will not be held straight in the housing as it rotates and could destroy the motor.

I've had a few stick blenders, and the really cheap ones don't do as good of a job as the ones that cost a little more. I have a Kitchenaid that does a pretty good job, it's got an adjustable speed and I can start it slow and then ramp it up as the vegetables break up. When I make a smooth veg soup, I boil the vegetables in the chicken broth, then puree in the pot. If I have enough broth in the soup, it will come out very smooth.

Only tip is, remove some of the liquid first, then purÃ¯Â¿Â½e, because if the result is too thick you can add liquid to thin it, but not the reverse.

I used to use my stand blender, now I use the stick blender almost exclusively. Way more convenient.

A stick blender changed my life!! I am not that fussy about food appearance, I can always strain it if I want it extra fine, but I use just my stick blender for everything now. Gave away my regular blender because I wasn't using it. I even do smoothies with the stick blender. Thanks to Johnliu I have a Cuisinart for everything else. They aren't very heavy duty so yes, watch them on the banging and heat, both baddies, so cool your mixtures before pureeing and also keep the blender from banging on the pot bottom or sides.

Another stick blender user here. I know you don't need more convincing, but I just want to thank Colleen and John for their great tips! I know I've been guilty of tapping the blender on the side of the pot - it's just a natural thing to do, so I'll stop. I love the idea of reserving some of the liquid for adding later. Thanks, John.

I'm with everyone else - cook the veggies in broth or water, and use a stick blender when they're cooked.

I also like to saute onions, brown them, and add to soups and cook with the veggies. They add a lot of flavor.

I use a silicone spatula to scrape off any puree back into the pot.
