Horseradish Sauce

Hi Everyone!

I was hoping for a good Horseradish Sauce from you. I like it hot - so I usually prefer straight to a sauce. But for Christmas, I thought a sauce would be nice to offer with the Prime Rib.

If I recall correctly, the HR Sauce served at Outback is pretty good. I Googled that recipe and found one that uses whip cream. That sounds so odd to me - is that really how Horseradish Sauce is made?

I was also researching good horseradish to use, CI lists Bore's Head as a top choice, but I'm not sure where to find it - Bristol Farm or Whole Foods perhaps? Anyone familiar with Atomic Horseradish? I did see that one in the refrigerated section at the local market.

This isn't fancy but I have mixed sour cream with jarred (refrigerated) horseradish until I liked the taste and served it with roast beef and worked out fine. I might have added a bit of dijon mustard - not much. Some salt & pepper.

I don't like the Boar's Head sauce. Too hot and not creamy enough.

We do like boars Head, but then again I like my HR sauce hot! I buy it at the deli counter of one of my local groverystores (Acme/Albertsons) none of the other carry it, so I might check the website to see who in your area has it.

Sorry I can't help with a homemade one.....

I read this to DH. He wants to know what the "problem" is. LOL! For many years, he thought a clove of garlic was the whole head. :D Sounds pretty darn good to us. Hope you don't have any dentist appointments this week, though. ;)

Olychick, with cream and w/o is how I serve it with ham, sliced, and on sandwiches, as well as beef. I prefer mine with a bit of cream as well. I misunderstood the offerings at T-day this year with friends, and thought someone said there was horseradish (they served ham and turkey). So I asked where it was located and was told in the fridge and to help myself, but couldn't find a spare spoon so I just up-ended the jar. Got horseradish 'juice' only. Not tasty!

Annie1992, thanks you very much. So it is that pink salt that gives it that red color? The nitrate/ite? Your CB and hash look so delicious. It’s 4 deg F here and I would love your CB hash. Friends used to make the best bestest Wisconsin Rubin sandwiches — home made everything. And served with delicious beer. PS Thanks foryour woodchuck help months ago. Apologies for not getting back th you. I developed pesky tendonitis, then some neighbor applied for a permit to recycle parts of Chernobyl, so between tendinitis and efforts to thwart the recycling plant (my euphemism for some outrageous crazy land use), I ran out of the ability to type very much and my attention was focused elsewhere for the most part. And during that time I develop the cold from hell – the cold that wouldn’t leave it. The empty woodchuck trap is still exactly where DH left it. Now with a bit of snow on it. I‘d asked him 100 zillion times to please put it away, but he has his own ideas, apparently. Not being a gardener, he didn’t grasp that a lot of the dug up sand was over some of my bulbs and tuber plantings. Sigh.

Yes, you CAN use real cream, of the heavy variety, unsweetened and whipped, then fold in your horseradish (well-drained). The use of whipped cream makes the horseradish sauce lighter than say, that of using mayonnaise or sour cream.

I AM saying do NOT use Cool Whip, Reddi Whip or other dessert whipped creams....you want the real stuff from the cow for a savory recipe such as horseradish sauce.

'Tis delicious on a nice slab of rare prime rib!!!!

I use the fat-free sour cream, but only the brand with the cow pattern. Other brands are awful by comparison. Just fold in the horseradish. Saves a lot in calories!

I use light sour cream - Daisy brand. Proportions are to your taste - I usually go 2/3 sour cream and 1/3 cream style horseradish.
