New Method for Chicken Broth--Comments

With all the discussion on broth lately, what is the conventional wisdom on this: The latest issue of Cooks Illustrated has an article on making chicken broth for chicken soup using the "Modern Method". The article recommends using ground chicken or turkey meat instead of carcasses and bones as the ground meat releases flavor far more quickly.

Basically it instructs to brown the ground meat with vegetables, then add bone in chicken breast and cook for 30 minutes. Remove breasts and cook stock for another 20 minutes.

I did try it last night and all was fine, but as I am made aware frequently here, I'm not always a good judge of what is good. LOL

BTW, I strained the ground turkey and fed it to my furbabies. They loved it so all was not a waste.
