Finally a Good Hummus

I've been trying forever to make a nice hummus. Today I had to whip up something to bring to a Mediterranean party so I thought Hummus. I don't know why since I've never had any success but I took the plunge.

I started with immature dried Vermont Cranberry beans from my garden. Hey they were in the pantry so they were fair game and I didnÂt have any chickpeas. I cooked them in water until tender, drained and rinsed them in cold water. Into the blender with 3 garlic cloves, some awesome olive oil, fresh lemon juice, smoked roasted red peppers, tahini and salt. Pureed it and tasted. The lemon flavor was nonexistent. I wanted it to be a tad lemony. I added more fresh lemon juice and stirred. Nope still no lemon flavor then it hit meÂI grabbed the lemon extract and put in about a half teaspoon. Yum!

Finally a hummus I can love! IÂm topping it with a little more olive oil and diced yellow and red smoked roasted peppers and serving it with homemade flatbread.

I wished I had measured things; IÂll probably never be able to duplicate itÂ..:-(

Did I mention I set my sweatshirt on fire smoking the peppers in the woodstove???
