Spread for bread to go with lasagna?

I'm going to try the Joey's killer lasagna for a big family dinner on Wednesday. I'm making 3 this weekend and freezing. I'll have a mixed salad, and would like to have bread along with it. Anyone have a favorite recipe that I could spread on the bread (what kind?) during the day and pop in the oven right after I take the lasagna out? Any ideas would be appreciated.

This one is a favourite of ours. We were served this in a little Italian restaurant in Buffalo, NY and I recreated it.

Italian Bread with Gorgonzola
=============================
Long loaf of Italian Bread or long crusty rolls.

1/4 cup butter
1/2 cup gorgonzola cheese
1 to 2 cloves garlic
parsley
salt
pepper
fresh grated parmesan cheese

Optional: Basil or Oregano
. Cream the butter with the gorgonzola cheese.

Mince garlic and add to cheese mixture. Add chopped parsley, and
season with salt and pepper.

If using the basil or the oregano add now as well.

Leave loaf whole, but cut slices so that the loaf stays together.
Spread cheese mixture in between each slice and reshape loaf. Sprinkle
top of loaf with parmesan cheese and wrap in foil. Place in 400Â°F oven
for 10 or 15 minutes and serve hot.

I mix 1-2 tbsp premade pesto (I have some from Trader Joes in a jar), 2-3 tbsp parmesan (or romano or blend) in with 1/2 c. margarine or butter. Spread it on bread, sprinkle with more parmesan, and bake for 10 minutes or so at 400 degrees. If not brown enough on top, broil for a few minutes.

If I have any leftover ricotta, I'll mix that into the spread as well.

Not to throw a wet lasagna blanket but... On the school grounds, or in your yard even, one principle would be not to leave kitchen scraps out in the open. So I might not have a kid dump his can full of rotten potates and orange peels out there for the varmints. A home lasagna-garden maker would time the layers to be sure those items could be buried under more inert materials. So, getting donated bags of shredded leaves or actual compost would be great. Another idea is shredded paper--THAT might be something you could get from homes or the school office--but needs to be wetted down or covered up so doesn't fly away and litter. Also, be sure you understand the grass clipping situation --avoid it if it contains seeds or sprigs of invasive lawn grass, because the purpose of the cardboard was to smother unwanted grass & weeds.

For those of us who have just recently discovered the lasagna bed concept -- and as a 58 year old gardener, believe me I'm rejoicing!! -- "The First Book of the Lasagna Bed" was a great find. z6a friend in NJ: I'm sure by now you've found this, but if not, google Pat Lanza, who wrote the book. I'm online tonight to order copies for myself and my S-I-L. No more digging in rocks, roots and hard clay. I'm elated!!

I agree on the 8 inch round pans for the coffee cake. For the casserole, butter your 8 by 11 dish very well, and pack in the frozen and well drained shredded potatoes....grate a little onion over the top...not a lot just about 2 teaspoons....enough to flavor it. Not sure what size the "packages" of hash browns are....but make the crust about 1/2 inch thick...pack the shredded potatoes in and then bake at 375 until lightly browned. That's your crust. then fill the dish with veggies of your choice...you will need 4 1/2 to 5 1/2 cups of veggies to fill the dish....and I would like a mixture of lightly sauteed onions, some red peppers, either roasted or from a jar, broccoli, maybe some cauliflower...both briefly blanched to soften a little...or previously frozen and drained, sliced sauteed mushrooms, maybe carrot buttons blanched, perhaps some dried or roasted tomatoes, maybe some water chesnuts. Just have enough veggies to fill the dish...I always have on hand a cam of sliced mushrooms and a bag of frozen broccoli in case I am short. toss with the shredded cheese and parsley and add all to the pan. Then mix up the eggs and milk...because you have used a potato crust you likely won't need all the 7 eggs and 3 cups of milk....more like 2 cups of milk and 5 eggs....with 2 tsps of worchestershire. Pour over the stuff in the pan////bake....and cool I think this recipe is better cooked right after making and reheated....rather than saving and baking later. Good luck!! Linda C

I don't make my own hummus, we have a grocer here (Wegman's) that makes great hummus so I buy theirs. I know Sabre makes a huge variety, but I don't think it would be hard to make your own, if you can get all the ingredients. Then you can add seasonings that you and your husband like. I like the avocado hummus and the spinach and artichoke hummus on my sandwich. Try some middle eastern or kosher markets, they should have some good stuff, too. They might have a good selection of low fat/low salt foods too, since heart disease and high blood pressure afflict all of us! I found some great low fat/low sodium hot dogs at the kosher grocer here in Baltimore. Good luck

Oh...I usually use a french bread or a mild sourdough baguette, sliced lengthwise horizontally into two halves. After baking, I just chop into 2 in. pieces.

I make a sinful garlic bread. Melt a stick of butter and mix with 4-5 chopped cloves of garlic (or a few tablespoons of the jarred stuff). Slice a big loaf of Italian bread into individual slices, but not quite all the way through, so they're still attached. Drizzle a couple of spoonfuls between each slice, then drizzle the rest of the butter over the top. Bake until warm - about 20-25 minutes at 375Â°F. Pull apart to serve. Enjoy!

You could slice the bread lengthwise and divide the butter mixture that way, too. You could use less butter but deliciousness might diminish. ;-)

Also, roasting a bulb or two of garlic in the oven, drizzled in olive oil and wrapped in foil, for an hour or so at 375 makes an excellent and easy spread for bread, and that way the butter is optional.

Last weekend I made a citrus butter log that got rave reviews

1 stick of butter room temperature
1 teaspoon orange zest
1 teaspoon lime zest
1 garlic clove finely minced

Mix all together in a small bowl. Either shape it into a log between wax paper or spread into small ramekins and chill until hardened.

This is really a wonderful recipe (it was a winner at the Gilroy Garlic Festival several years ago) and if you wanted to prepare it ahead and heat at the last minute, I guess you could shorten the heating time in the oven and pop it under the broiler.

GILROY GARLIC BREAD

3/4 cup (1 1/2 sticks) butter, room temp
3/4 cup freshly grated Parmesan cheese (about 3 ounces)
6 tablespoons mayonnaise
3 large garlic cloves, minced
2 tablespoons chopped fresh parsley
1/4 teaspoon (generous) dried oregano, crumbled
1 1-pound loaf French bread, halved lengthwise

Thoroughly combine first 6 ingredients in medium bowl. (Can be prepared 2 days ahead. Refrigerate. Bring to room temp before continuing.)

Preheat oven to 375*. Spread garlic butter on cut side of bread, wrap each half in foil. (Can be prepared 1 day ahead. Refrigerate.) Place bread on baking sheet cut side up. Bake 20 minutes. Remove foil from bread.

Preheat broiler. Broil cut side up until golden brown, about 2 minutes.
