This was my MIL's recipe for them. Sauerkraut Balls 8 slices b acon 1/2 c. fineluy chopped onion 1 clove garlic, minced (not in my house with my allergies!) 1 can (16-oz.) sauerkraut, drained (I use bagged) 1/2 c. mashed potatoes 1 T parsley 1 1/2 c finely crushed corn flakes 2 eggs beaten Oil Fry bacon in large skillet crisp, drain & crumble. Pour off all but 2 T. fat. Add onions & garlic to fat in skillet. Cook & stir until onion is tender. Remove from heat, stir in bacon, sauerkraut, mashed potatoes & parsley. Drop by rounded teaspoonful onto waxed paper lined baking sheet. Gently form ball shapes. Cover with waxed paper or plastic wrap, refrigerate until firm or overnite. Dip sauerkraut balls in eggs. Roll in cereal. Heat oil to 375° F., fry until golden brown about 1/2 min. Drain on paper toweling. Serve hot. Can be fried 24 hours in advance and reheat in 400°F. oven about 10 minutes. We make a bunch and freeze them after they are fried. Just thaw and heat in an electric roaster. Don't ask how many the recipe makes! I have no idea! Tami

These simple appetizers are something that we always have on hand for surprise guests. They freeze extremely well, are very easy to make, and are always popular. They go together very well with the rest of this festive menu and require no preparation time at all on a very busy day. Simply defrost and eat! Makes 60 bites 6 ounces marinated artichoke hearts in oil 6 ounces roasted bell peppers 1 small chopped onion 2 minced cloves garlic 4 eggs 2 cups shredded Cheddar cheese 1/4 cup dry bread crumbs 2 tablespoons chopped fresh parsley Dash hot pepper sauce Freshly ground black pepper Preheat the oven to 350 degrees and grease an 8 inch baking dish. Drain the artichoke hearts, reserving 2 tablespoons of the oil. Drain the roasted peppers and discard the liquid. Finely chop the artichoke hearts and peppers and set aside. Heat a large skillet over medium heat. Add the reserved oil, onion, and garlic. Cook for five minutes, or until soft and translucent. Remove from the heat and cool slightly. Beat the eggs in a large bowl until thick and lemon colored. Beat in the remaining ingredients along with the artichoke hearts, peppers, and onion mixture. Pour into the prepared pan. Bake for 30 minutes, or until pale golden brown. Cool for 15 minutes, then cut into one inch squares. Tightly wrap and refrigerate for up to 2 days, or freeze for up to a month. Serve cold, at room temperature, or gently reheated in a 300 degree oven for 5-10 minutes.

I've read it is not good for cheesecake but I don't make cheesecake anyway. I have seen recipes for cheesecake using it in Cooking Light magazine, but I dunno if the recipes are any good. Probably not good in danish and the like either. I use it mostly to spread on bagels and toast and english muffins, in which case it tastes just fine. I top it with a dab of homeade jam, yum. Great with lox, since that has a strong taste so I don't miss the extra taste for that application. Fine with those dream eggs, because they were flavored with the herbs anyway, and the neufatchel just added a wonderful creamy texture, even with 1/3 less fat. Since cream cheese is almost pure fat, 1/3 less doesn't make it a diet food by any means, but I like it just as well if not better than cream cheese for what I use it for, so that's what I buy for the calorie savings. I don't mind it in party spreads either. Note: I made a double batch and baked it in a round cake pan with a "releaser" bar that spins around the bottom to prevent sticking. DH and I went out today on a chicken coop tour of East Dallas. (which was lots of fun, but a whole nother topic) Then I had to clean the kitchen in order to cook in it. But, my little grandson (a month away from 3 yrs. old) and I did get started on Nate's carrot cake cookies, but since we didn't finish making the dough until an hour before his bed time, and the dough has to chill at least an hour, it'll be tomorrow before we bake them and do the cream cheese part. It doesn't matter. Both DGS and I had a great time mixing up the batter. He got to taste the flour, the sugar, the butter, and all the other ingredients as they went into the mix. No germaphobes need taste these cookies when they're done! Thanks Nate for the recipe, and the fun time with my grandson! I put it under jam and on toast and bananas and apples all the time, but don't use it in "recipes." I can't wait to see what we get here! So much of what is mentioned is way to sophisticated for this group, people who wouldn't touch a chicken liver in their lifetime, lol, and would be happy with some Frito's. And brie is really too exotic for them. I had a party this past weekend where I had many of the things mentioned, wrapped brie, pinwheels, bacon wrapped dates, and am sick of all of that as I ate the leftovers. I do love seafood as an appetizer for lasagna, it's perfect but oh well. It's a heavy, traditional, meaty, cheesy lasagna. I have a bunch of crackers so am thinking a roasted red pepper dip, some spiced pecans and some veggies. This is so boring with all these good ideas floating around. I'm also toying with won ton cups with a variety of fillings, some of which could have crab, for the two of us who do like seafood. Or endive filled.
