A bit of Christmas baking

I usually make several Norwegian goodies during the holidays. So far, I've made several batches of rosettes, lefse, and sandbakkels. Yet to make are the krumkake. Any others out there with Norwegian heritage?

German, not Norwegian. But I just wanted to tell you how absolutely PERFECT your rosettes are. I am so impressed.

Hi joyce, I was going to say that I am not Norwegian, but I have all the rosette irons and fire them up from time to time. I got into doing them from my ex wife. But I just realized that since I am related to Thorstein Veblen, I guess I qualify.

How do you get your rosettes to come out so uniformly with edges that perfectly match the iron without expanding a little (or sometimes a lot) as often happens for me so the shape gets distorted?

I use your basic peanut butter rice krispie balls, and add a twist of christmas for kiddos, if they're around. Do a search for 'peanut butter rice krispie balls' The recipe I use looks simmilar to this: PEANUT BUTTER RICE KRISPIE BALLS 2 c. Rice Krispies 1 c. peanut butter 1 bag Nestle's chocolate chips 1/2 stick butter Melt butter in a 2 quart saucepan. Add peanut butter. Melt until smooth. Add Rice Krispies. Remove from heat and let cool 10 minutes. Melt chocolate chips until smooth. Roll Rice Krispies into 1 1/2 to 2 inch balls. Dip ball into melted chocolate (top 1/2). Place on a cookie sheet to harden in freezer. Eat frozen or thaw, your choice! Enjoy! However, I roll the rice krispies and peanut butter and then freeze over-night. Good luck getting them to stick on a toothpick to dip in the chocolate otherwise. I also dip the whole thing, too. Not just half. I then place them on wax paper on a cookie sheet, and in the fridge. Now, for the christmas twist!! After I roll the peanut butter and rice krispies, I stick a mini pepermint candy cane in them, so about half of it sticks out. It looks like a hook. Then freeze over night. Using the hook instead of tooth picks, dip them in chocolate. As soon as they are covered, either sprinkle on the red and green rice krispies, or red and green sprinkles. Or let kids choose, if they're around. You end up with tasty cookies that look like christmas balls. Just remind kids to pull out the candy cane, or eat around it if they can't get it out. Unless they don't mind the peppermint taste with the cookie. ------ These are a standby for me, because they yeild so many, are easy and kids and adults seem to like them. Benne Wafers. Yeild 120 cookies! 1 tablespoon unsalted butter, softened. 1 cup firmly packed light brown sugar. 1 large egg. 1/2 cup sesame seeds. 2 tablespoons all purpose flour. 1/2 teaspoon vanilla extract 1/4 teaspoon salt. Preheat oven to 350F. Line two sheets with parchment paper and coat with non-stick spray. (I just use a dark cookie sheet, and the non-stick spray, it works just as well) Beat the butter in a medium sized bowl with a wooden spoon. Add brown sugar and stir vigorously until combined. Beat in egg until combined. Add remaining ingredients and stir until well mixed. Drop cookies on sheet by 1/4 teaspoon atleast 2 inches apart (*) Bake about 7 minutes until golden brown. Cookies will be crispy on the outside, with an even colour and soft in the middle. They will harden after cooling, but still remain soft in the middle. * These cookies spread about 1 1/4 inches while baking. Make sure to follow directions. They are very thin and fragile. If you think 120 is too much, it's not! People will eat 5-6 at a time, because they are light and crispy. And you can fit a large amount into a small christmas tin, because of their size. They are definately not hard to get rid of!

Roselin, this was an easy recipe. I made it for my MIL a few months back and she raved about it. So I thought it would be good for Christmas too. The recipe came from Allrecipes.com. Here's the recipe: Cinnamon Biscotti: Ingredients * 2 cups all-purpose flour * 1 1/2 teaspoons ground cinnamon * 1 teaspoon baking powder * 1/4 teaspoon salt * 2/3 cup white sugar * 6 tablespoons butter * 1 egg * 1 egg yolk * 1 teaspoon vanilla extract * 1 egg, beaten * 3 tablespoons white sugar * 1 teaspoon ground cinnamon Directions Preheat oven to 325 degrees F (165 degrees C). Line baking sheets with parchment paper. Sift together the flour, 1 1/2 teaspoon cinnamon, baking powder and salt, set aside. In a medium bowl, cream together the 2/3 cup sugar and butter. Beat in 1 egg, egg yolk and vanilla. Stir in the dry ingredients. On a lightly floured surface, divide dough into two pieces. Roll each piece into a log about 9 inches long and 1 1/2 inches wide. Place logs on the prepared baking sheet and flatten slightly. Brush with the beaten egg. Bake for 25 to 30 minutes in the preheated oven, until golden and firm to the touch. Cool for 15 minutes. On a cutting board, slice each log crosswise at a diagonal into 1/2 inch slices, using a serrated knife. Place back on the baking sheet, cut side down, and sprinkle with a mixture of the remaining cinnamon and sugar. Return to the oven for an additional 15 to 20 minutes, until toasted. Cool on wire racks, and store in an airtight container.

Colleen, I can only say that you should be sure they are at least written down. My family had/has several "secret" recipes that no one knows how to make because they were family secrets and younger generations just aren't interested enough to ever obtain them before elderly family members died. I was guilty of that myself with some of Grandma's recipes, but fortunately she shared them and so I found other family members that still had them years after Grandma was gone and I finally decided I wanted to make them. I have a cousin who, when her Mother died, just rented a dumpster. When I asked about old family movies, hoping to have them put onto DVDs, she told me that she didn't think anyone was interested in all that "old stuff" and they went into the dumpster with pretty much everything else that wasn't worth money. (sigh) I know we've had this discussion here before, but today's generation just isn't as interested in "family heirlooms", they are more mobile and have less space and different lifestyles. Someone might want those recipes later, though, and hopefully they'll be preserved in some way. Annie

Here you go: Orange Scented Chocolate Almond Bark 1 pound chocolate (I use 42% semi sweet) Approx. 1 scant tsp. finely grated orange peel or a few drops of orange essential oil 2 cups roasted almonds*, very coarsely chopped - reserve a tsp. or 2 very finely chopped nuts for dusting Approx. 1 tsp. flaked sea salt (optional) Directions: Line a large cooky sheet with parchment paper. In a bowl set over a saucepan of gently simmering water, heat the chocolate, stirring until it is mostly melted; do not let the bowl touch the water. Add the orange peel and stir until the chocolate is completely melted & smooth. Do not overheat. Stir the prepared nuts into the chocolate, mixing well, and turn out onto the lined baking sheet, spreading in a 1/2-inch-thick layer. Sprinkle with the reserved finely chopped nuts & then the sea salt, crushing the salt flakes as you sprinkle them on. Refrigerate the pan with the bark on it for about 20-30 minutes, until hardened. Remove the bark from the parchment paper, break into pieces and store in the fridge or serve at once. * other nuts may be used instead of almonds To Roast Nuts: Preheat oven to 350F Spread whole nuts in a single layer on a baking sheet or pan. Bake for 5 minutes, then stir and bake for another 5 minutes. Check for color. If nuts are still not done, stir & bake an additional 1-2 minutes at a time until golden brown. Check often, since nuts can burn quickly! To remove skins, place slightly cooled nuts in a clean, dry towel, gather the towel around the nuts & rub vigorously. Skins should come off, but if they don’t, it’s OK. Cool & chop as desired.

And how do you keep them fresh until the holiday?

Yes. The only time I've had rosettes was eating them while they were still warm. We didn't even care for them fresh but completely cooled.

Nancedar: Have to say that Grandkids were just here, and everything was eaten up. So I start again! :-)

Chas: I've been baking rosettes for so long, so not really sure how to answer your question. I've used the same "old" recipe for 50 yrs. The old Norwegian lady I got it from is almost 100 now. But as far as the uniform edges, I plunge the iron far enough into the oil so it is completely covered. Not sure if that's the answer, but I do know if I don't do that the edges will splay out a bit. And my batter is a bit on the thin side.

Thanks Joyce, I think that may indeed answer my question although I suspect my approach may be similar but not exact.

I had considered answering nancedar with a similar response to yours, but it does beg the question about ways to keep them 'fresh'. I came from California where humidity is always low and I never even thought about how to keep some leftovers for a couple days. However, i am now in North Carolina with oppressive humidity and made the mistake of bringing some to a Fourth of July party. Fortunately, I passed a whole bunch of them out on my way to a serving table, but after they sat there for a couple hours, they had turned soft and were only worth looking at.

Thanks for the heads up about humidity; I live with high humidity you would think I would be constantly aware about it contributing to soggy.

Norwegian heritage here as well. I am hoping to make rommegrot for the first time in many, many years. I have a very old recipe that was from the Mom of a friend. Nothing was measured so I am guessing at the amounts. Would love your recipe for the cookies if you would share.

Joyce_6333, Those rosettes are just beautiful! I make them each year, but I only have a Fry Daddy so I have no idea of the temp of the oil when I make the rosettes. They turn out ok, but they're not perfect. I do use my mom's 1950-era rosette irons and I use peanut oil for frying. I'm getting in the mood for Christmas baking!!

Rommegrot. Omg I have tried to like it but a bit rich for me. They serve it at our local summer festival and the old Norske folks go nuts for it.

I use a very old fondue pot to make rosettes. The "meat" setting works perfectly.
