How much orange zest?

My husband and I are staying at home by ourselves for Christmas this year. For snacking over the weekend he asked for White Chocolate Macadamia cookies. I have a recipe for that but he wants it to have orange flavor. That seems wrong to me:) But maybe that's just my palate. So throw in some Orange Extract (assuming it exists) or orange zest? If so, how much is good? My recipe makes two dozen cookies.

It might be good!

I'd use zest and taste it as I go, but I know not everyone is comfortable eating raw eggs in batter. I won't venture a guess as to how much though--I'm sort of notorious for using so much zest (especially in lemon or lime things) that nobody but me can stand to eat it. Does he want ORANGE cookies, or a hint of orange? Maybe hubby should test the batter!

I think it might be good too.

I'd use the zest of one orange....why? Because two is too many and what would I do with other half if I only used a half? LOL

Seriously, I think somewhere between the zest of 1/2 - 1 orange would be great.

Please report back, with the recipe too please! MY DH would love those cookies.

Beth, even tho CS fades....it sounds like it might work in the spot I have planned for it. It would get excellent sunlight. Since it has so many blooms.....maybe the faded ones would also have new ones to offset. Are the blooms smaller or floribunda size? Since you grow so many great roses, could you possibly suggest a companion to go in the other pot on the opposite side of the arbor? Perhaps a stripe? I plan to get Julio Iglesis at Teas Nursery in Houston next month......thought they might balance each other but if you can think of another stripe that would look good, I am all ears. Now not sure whether to order GZ or not.......everything I read about it says it is a top notch bloomer. Hopefully someone else will comment....No need ordering a rose that doesnt bloom well... There are two basic methods for fertilizing citrus; i.e., 3-4 times per year, used for most inground trees; and a weak solution often applied with each watering; it is commonly known as "weakly weekly" and is a common procedure with container citrus. I would suspect that 1 tbsp per gallon is for the "weakly weekly" approach; that is, whenever you water. Be careful with the planting mix you use, as you can get salt buildup. Regarding transplanting, it is best to hold off fertilizing for 2-3 weeks after re-potting. The absence of fertility encourages feeder roots to grow in search of food; and after the roots grow, the leaves and branches start to grow; and that is the time to fertilize.

This is our hands-down favorite with Meyers. Must be served with lots of softly-whipped, organic heavy cream - divine! Lemon Sponge Pudding Cake This is a lovely light dessert. All the ingredients are mixed in one bowl, but something magic happens in the oven: The batter separates into two layers, a creamy lemon pudding on the bottom, a light sponge cake on top. If you want to make a double recipe, it does NOT double when baking. Make a double recipe, but divide into two 1-qt stainless steel bowls or soufflÃ© dishes when baking. INGREDIENTS 1/2 cup sugar 1/8 teaspoon salt (optional) 2 Tblsp all-purpose flour 1/3 cup Meyer lemon juice or 2 Tbls grocery store lemon juice Finely grated zest of 1/2 lemon 2 eggs, separated 1 cup milk Whipped cream, lightly sweetened INSTRUCTIONS Preheat the oven to 350 degrees. Butter (or spray with a canola cooking spray) a 1-quart baking dish or stainless steel mixing bowl. Get out a slightly larger pan, at least 2 inches deep, that will hold the pan(s) comfortably. Combine sugar, salt and flour in a mixing bowl; stir to blend. Add the beaten egg yolks with the milk. Add the lemon juice and zest and stir until thoroughly blended. Beat the egg whites in a bowl until stiff but not dry. Fold the beaten egg whites into the lemon mixture. Pour into the prepared baking dish. Set the dish in the larger pan and pour in hot water to come halfway up the sides of the baking dish. Bake for 40-45 minutes, until the top is lightly browned and just begins to crack. Serve warm or chilled, topped with whipped cream. Serves 4-5

I would like others suggest ..for go the extract..and just use the zest..I'd go with a whole orange unless it's a mammoth..LOL

I love orange and chocolate..even with white chocolate..and toss in some cranberries if you are feeling really flavor brave!! Yummmm

Thank you folks! Oh very good, I feel encouraged now. He does want the cookie to have an orange accent, not be an orange cookie. Good question. I should have clarified.

I will let you all know how this works out. Your enthusiasm is making me a little more open to the idea.

Terri I like where your mind is at with the cranberries. Linking to the recipe below. As written this recipe is White Chocolate and Cranberry cookies but I planned to substitute the nuts for the cranberries this time. However this is my favorite cookie recipe and whenever I want to feed someone I really like I make this:)

I just posted about an orange sable cookie recipe, asking about the lack of salt in the recipe. Anyway, the recipe calls for 3 tablespoons of zest, which takes 2 to 3 oranges. I thought for sure it wouldn't take more than one, but sure enough, it took 3 good size oranges to make 3 tablespoons of zest, so I'd expect about a tablespoon of zest per orange. I don't know if that helps you decide how much to use, though.

Oh, and add me to the list of people that love orange and chocolate together. Your cookies should be very good!

RECIPE: Chunky Orange Marmalade Cookies

I made these cookies tonight and doubled the recipe. Instead of using two egg yolks, I used one whole large egg. And I used sweet butter instead of shortening. I asked about those substitutions in the Cooking forum and promised I'd share the recipe when I finished. So, here it is.....
Chunky Orange Marmalade Cookies

1/4 cup shortening (I used unsalted butter)
1 egg yolk
1/2 cup orange marmalade
1/2 tsp. vanilla
1 cup all-purpose flour
1/2 tsp. salt
1/2 tsp. BP
1/2 tsp. BS
1/2 tsp. ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup semisweet chocolate chips
1/2 cup chopped pecans (magazine says "teaspoon" instead of "cup"... has to be an error!)

Combine the flour, salt, BP, BS, cinnamon and nutmeg, set aside.

Cream the shortening, egg yolk, and marmalade until light and fluffy. Beat in vanilla.

Add flour mixture to creamed mixture and mix well. Stir in chocolate chips and pecans.

Drop by tablespoonfuls 2 inches apart on greased baking sheets (I used non-stick pans and didn't grease). Bake at 350Â° for 12-15 minutes or until lightly browned. Remove to wire racks.

Yield: 2 dozen (my double batch yielded 3 dozen

Hmm, now my own thread has me thinkin':) I am making Chocolate Banana Bread for a Christmas party on Friday this evening when I get home. Even though it will be dark chocolate perhaps the bread recipe would be nicely complimented by some orange zest. Sounds good anyway.
