Turkey redux.

I decided last night that we could finally look at turkey again and pulled out a couple of the containers of frozen stock and the leftover frozen turkey. It was a perfect morning to simmer a pot of soup. It rained hard last night and the sky was still glowering when I woke.

My soup contains a good portion of the contents of the vegetable drawer: carrots, celery, red and green bell pepper, and shallots. I also tossed in some diced sun-dried tomatoes and a bit of chicken base and a few splashes of dry sherry. I had a packet of long grain and wild rice and dropped that in as well. Darn good soup. And a lot of it as well. A large container is destined for the the house of my son and ex.

Anyone else have turkey hanging around? I still have frozen stock to use up later. I think I used all the turkey but the garage freezer is dark so more turkey may still lurk.
