Here's 2 more that I love to make..

I love CHOCOLATE... and who doesn't love a muffin???

This one is a photo copy of a cookbook..But I didn't write which book it's from..I'm thinking it might be Dorie...

Chocolate-Chocolate Chunk Muffins

makes 12

3/4 stick unsalted butter

4 oz bittersweet chocolate, coarsely chopped and divided in half

2 c ap flour

2/3 c sugar

1/3 c unsweetened cocoa

1 T baking powder

1/2 t baking soda

1/2 t salt

1 1/4c buttermilk

1 large egg

1 t vanilla

Preheat oven to 375F. Grease, paper or use silicone pan.

Melt butter and half the chocolate together in a bowl over a saucepan of simmering water; or do this in the microwave. Remove from heat. In a large bowl, whisk together the flour, sugar, cocoa, baking powder, baking soda and salt. In a large glass measuring cup whisk together the melted chocolate mixture, buttermilk, egg and vanilla. Pour liquid over dry and gently fold to blend. Don't worry about a few clumps, toss in the 2nd half of the chocolate and fold in. Divide evenly among the 12 cups. Bake about 20 minutes. Cool 5 before depanning.

Wrapped air tight they can be frozen up to 2 months.
