I LOVE white chili.

How about an ITALIAN guacamole?

It's a salsa cruda or chunky guacamole with chopped tomatoes, chopped black olives (such as Kalamata) and chopped pepperoncini instead of a Mexican type pepper.

It's good as a dip and as a topping to the chili.

Thanks Joe, that's an idea. Now I'm off to see what's in the pantry. I know I have pepperoncini's, but not too sure about olives...Can you think of anything else I might be able to tweak this with? (Since of course I've never made it before!)

The pepperonicini's alone are enough to make this a special guac.

In my usual guacamole, I include some white vinegar. But with this version, the vinegar of the pepperoncini's is enough.

If no olives, try some finely chopped pickles or capers. Very different but VERY good.

I alos put finely chopped onion in the guac, usually green onion.

Include some salt, pepper and minced garlic. Maybe fold in some roasted garlic.

How about a bunch of roma tomatoes, halved and seasoned with a drizzle of olive oil, kosher salt and fresh ground pepper, some garlic powder, a bit of dried basil....topped with crumbs and a few gratings o parmesan.
Have them all on a baking sheet and when you get there just pop them into a 425 oven for about 15 to 20 minutes and they are good.

I agree with Joe's suggestion..
I just had some leftover white chili and sliced avocado into it..It was good..

I made Ann T's Scones and put in white cheddar and black pepper when I served the chili the first time around..it was a very good combination.

Claire, Maybe it is just me that would have a problem with this. But if the hostess has told you that she has it covered, then I don't think that I would take anything more than what you were already taking. I know that when I tell guests that I have it covered, it means that I have everything planned the way I want it.

I would just take what you were asked to bring and the bubbly.

I agree with ann t - I am in that situation tonight. I am the guest, only bringing what the hostess asked (after I begged) and yes it is hard not to do more. Also we're taking wine and bubbly........

Thanks everyone. OK, I'll do as the hostess asked. (Unfortunately we have very different dietary needs, and I was in self-preservation mode.) We often bring whatever is on hand when we get together, so I thought it would be okay this time as well. I'll just do what is suggested, and take a hostess gift instead.
