What goes with white chili?

I'd like to contribute something for dinner at a friend's house who is serving this with cheese (I'm to bring crackers), some kind of okra and bread pudding for dessert. Besides bringing some bubbly, I'm kind of stuck for ideas. I wouldn't mind bringing a salad, but what kind? She seemed to think it was covered, but I'd like to contribute something else to the evening. Does anyone have ideas?

I LOVE white chili.

How about an ITALIAN guacamole?

It's a salsa cruda or chunky guacamole with chopped tomatoes, chopped black olives (such as Kalamata) and chopped pepperoncini instead of a Mexican type pepper.

It's good as a dip and as a topping to the chili.

Thanks Joe, that's an idea. Now I'm off to see what's in the pantry. I know I have pepperoncini's, but not too sure about olives...Can you think of anything else I might be able to tweak this with? (Since of course I've never made it before!)

Hint: I buy the rotisserie chicken from WalMart/Publix Here's white chili with my rendition: 1 can chicken broth 1Tbl olive oil 2 boneless chicken breast, chopped ***I use WalMarts whole rotisserie chicken and shred it. I just eyeball the chicken 1/4 cup or more chopped onion 1 4 oz can green chiles, chopped ***I puree mine with my hand blender WITH juice 1 19 oz can navy beans, undrained 1 tsp garlic powder 1/2 tsp cilantro ***I use instead 2 tsp chili powder 1/2 tsp oregano 1/8 tsp red pepper Sauce chicken and onions 4-5 minutes in olive oil **If using Wal Marts cooked, saute onions only till translucent Stir in spices, broth, simmer about 15 minutes, then add beans and shredded chicken and simmer 5 more minutes, to get the flavors blended. We love it topped with fritos, shredded cheese, and a dollop of sour cream

I was previously unaware of sunscald on chilies, but it appears to be a common problem. At least my damage is minimal, and the rest of my chili plants have lots of large leaves, which I think will protect the other developing chilies. However, I did think this would be a bigger problem in summer. One thing I did wrong with the damaged plant was to prop it up with stakes to make it grow more vertically, and when I did this, I think it exposed the chilies to too much sun. I'll remove the damaged ones, as they are ready to pick anyway.

I'm looking for a neutral gray/off-white with an LRV of 70-75 that doesn't read purple (many grays and grieges do!), blue, or pink. I don't want a throwback to "builder's taupe." And after seeing White Duck on the wall in my house, I'd definitely characterize it as tan. In photos online, it looks like a warm off-white with a hint of green. In my house, it's brownish beige. I might have liked it 20 years ago.

The pepperonicini's alone are enough to make this a special guac.

In my usual guacamole, I include some white vinegar. But with this version, the vinegar of the pepperoncini's is enough.

If no olives, try some finely chopped pickles or capers. Very different but VERY good.

I alos put finely chopped onion in the guac, usually green onion.

Include some salt, pepper and minced garlic. Maybe fold in some roasted garlic.

How about a bunch of roma tomatoes, halved and seasoned with a drizzle of olive oil, kosher salt and fresh ground pepper, some garlic powder, a bit of dried basil....topped with crumbs and a few gratings o parmesan.
Have them all on a baking sheet and when you get there just pop them into a 425 oven for about 15 to 20 minutes and they are good.

I agree with Joe's suggestion..
I just had some leftover white chili and sliced avocado into it..It was good..

I made Ann T's Scones and put in white cheddar and black pepper when I served the chili the first time around..it was a very good combination.

Claire, Maybe it is just me that would have a problem with this. But if the hostess has told you that she has it covered, then I don't think that I would take anything more than what you were already taking. I know that when I tell guests that I have it covered, it means that I have everything planned the way I want it.

I would just take what you were asked to bring and the bubbly.

I agree with ann t - I am in that situation tonight. I am the guest, only bringing what the hostess asked (after I begged) and yes it is hard not to do more. Also we're taking wine and bubbly........

If you really, really want to take something else, take a gift that the hosts can consume another time.

Thanks everyone. OK, I'll do as the hostess asked. (Unfortunately we have very different dietary needs, and I was in self-preservation mode.) We often bring whatever is on hand when we get together, so I thought it would be okay this time as well. I'll just do what is suggested, and take a hostess gift instead.
