Question about caramel sauce. Separated?

DH is getting very adventurous about cooking ever since he became head cook after I broke my hip. He is now making Christmas cookies on his own. Something he has never done before.

The one he is making is Almond Roca cookie bars. (I told him he should have started with something simpler.) It calls for a caramel sauce. I have never been good at making caramel myself, but I think he did it wrong and cooked it too long. The sugar has crystalized and the butter has separated out. No matter how much he is mixing it, he can't get it to blend together again. Any way to get it mixed back together again?

I think he should try again. We have a Wolf stove with super high BTUs. I think he may have had the heat too high and should have cooked it on low. Any tips on making it the second time so it doesn't happen again?

Thanks.

Clare
