Cookie Trays--Too Early?

I am planning on giving some cookie trays next Saturday at my annual family Christmas Party. I plan on baking a few batches a night. My question is how do you store until ready to use? Should I freeze, place in gallon plastic bags or tins until I'm ready to assemble? What cookies seem to get better with age? Will they still be good by next Saturday?

They should still be fine by next Sat. if you keep them in an airtight container such as Tupperware. I don't know about ones that get better with age but I would say that if you were not going to use them within a week that freezing them in ziplock bags would be best

You are welcome. I don't have alot of freezer space..well I will once the Turkey comes out this weekend. LOL So I guess I have no excuse for getting ahead at that point huh? LOL I have several old issues of Better Homes and Gardens Christmas Cookie magazine..I love going through them every year and trying atleast one or 2 new recipes to me from them.

georgysmom, You said," ...but I have a MacBook....no left click, no right click..." You need to go into your System Preferences (upper left menu bar, click on the apple, select System Preferences, and then under the Hardware list you should find TRACKPAD to double click.) You will be able to select what actions represent right clicks, left clicks, and probably page back, page forward, and swiping up and down. I have a separate trackpad as I'm using my desktop Mac, but for example, I use a single finger tap as the usual 'left click' (as you probably are already doing), two finger tap for a "right click", two fingers to swipe the screen up and down, and 3 fingers to go back and forward a screen. You may or may not have all of those choices depending on what system your Mac is running, but you should have most of them. If you have a Mac mouse, you'll find that you can make whatever changes you'd like as well in the System Preferences. The system actually works very well and is very flexible if you're right handed or left handed you can make it work for you. Helene

I have already gifted every one I care to give them to. Next step would be to walk down the street knocking on doors (which I have done before). But I have not had a good reception with such sharing before so I am not inclined to do it again. Spritz are so much work that I don’t want to throw them away on the unappreciative. I have written on the recipe card to make 2 fewer batches next year. Tins I have plenty of. I buy them as I see them in resale shops during the year, as no one ever returns them. At least for now I will pack up what I have. One advantage to that is if I have to go out to the garage to eat cookies, it might slow me down. ;) I’m thinking about bagging a stack of 5 cookies then putting them in the tins, so I can go get "one serving" at a time. .

I freeze everything. I would definitely freeze something I wasn't going to hand out until next weekend. Let us know what you end up making.

I say unless the recipe states...good for weeks...I'd freeze too...In fact I'm doing 3 flavors of cutouts today, that aren't needed until Thursday...and I'll freeze them today when they are fully cool in ziplocs.

So can any cookie freeze? Coconut Macaroons--Pecan Tassies? What about candy--like fudge? Today I made Santa's Whiskers, Santa's Helpers and Spritz. It was my first time making Santa's Whiskers and yummy.

Hmmm, I would freeze: Tassies, Santa's Helpers, Whiskers and Spritz...even fudge if I had to..but macaroons...not so....much...

I'd freeze the cookies as well.

Another method to use is to make your dough well ahead of time (when you have a spare moment), divide into dollops with a portion scoop, and freeze the dough balls in plastic containers or freezer bags (divide the layers with parchment paper).

Hubby and I did that last weekend - one continuous mixing marathon... Yesterday and today we had a bake-off and delivered freshly-baked cookies to neighbors and friends.

It's so much nicer just baking the cookies without all the clean-up from mixing.

I would also freeze them; after all, people are going to be enjoying them for a while so they might as well be as fresh as can be.
