Kosher kitchen plumbing questions

We are planning to remodel our kitchen this spring. I want to put in a triple sink (the kind with the small sink in between two larger bowls). The middle bowl would be connected to a waste disposal. Since we keep kosher, one bowl would be designated for meat and the other for dairy. Each will be next to a dishwasher for either meat or dairy (in a kosher kitchen meat and dairy must remain absolutely separate).

I know that sometimes water from a dishwasher will come bubbling up into the sink. If it's hot, this poses a problem for kashrut: Hot water from a dishwasher we use for meat dishes coming up into a dairy sink would render the sink unkosher (and if we didn't see it happen, we wouldn't even know!).

1. What is the best way to handle the plumbing to ensure that water from the drain or the dishwashers doesn't come up into the sink?

2. Is it possible to run the drains from the sinks separately so that there is no chance that backflow will occur in the sinks or dishwashers?
