Michigan Black Cherry Preserves

I'm in love!!!! A few years ago while visiting friends in NC, who live just off the Blue ridge Parkway, we had occasion to eat at the Parkways Mabry Mill Restaurant several times. Enter Michigan Black Cherry Preserves...OMG I thought I had died and gone to Heaven. Anyhow, the restaurant is temporarily closed for repairs to the parkway, no timetable as to when it will be finished.

I want some of those preserves!! I have no idea what the brand name was. A friend brought me a jar processed by Clearbrook Farms and they are very good too. Any of you lucky people in Michigan have any recommendations?

I will order multiple jars and share with a friend.

I'll put a link to Cherry Republic below, they make preserves using black cherries.

The other place is American Spoon. They don't do a preserve with the black cherries but many people use the Black Cherry Fruit Perfect. It's a little softer, not as sweet as a preserve.

Mika: The Good Fruit Grower is a good magazine. It is out of Washington state but has articles about Eastern US and international fruit growing on a regular basis. I've been reading it for about 20yrs and have learned more there than any other way. The subscription is reasonable, $75 for 3yrs. The tunnel work is being done at Benton Harbor where trees were just planted and at Clarksville in a 7yr old planting. Work is headed up by Dr Gregory Lang. Don't know about website but you could check MSU hort website and likely find something. Frank: I wondered as well when they covered the crop in the spring. Article didn't say. But did say it is covered during bloom and I think all summer. They said they are going to try a black ground cover during bloom to warm soil and keep down weeds then add a reflective ground cover after bloom. I have a reflective soil cover on my greenhouse floor all yr. It serves to put more light into the foliage and has been shown to help sweet cherries in Washington state. It also may discourage insects like whiteflies that are drawn to areas with bright sky above and dark foliage below. In my greenhouse both the sky and floor are bright. It was also very interesting to me that some insects like Jap Beetle and possibly Plum Curculio may not fly into areas without UV radiation because they use that wavelenght of light to navigate. I like my greenhouse because I cann't get a sunburn in there as the poly blocks 100% of UV. Also think it is safer on my eyes when I don't wear sunglasses as compared to outside where I think sunglasses are necessary. It also might be true that pesticides, when needed, may last longer under the tunnel because they are not washed off by rain and will likely be less affected by sunlight. So these are very complicated systems but the people doing the work think they hold promise for organic or integrated pest control. I got the recipe right here at Harvest Forum.....I don't know if it was her recipe but Deanna posted it here at Harvest... Black Forest Preserves 6 1/2 cups granulated sugar 1/3 cup sifted unsweetened cocoa powder 3 cups firmly packed coarsely chopped pitted sweet black cherries 1/2 cup lemon juice 2 pouches liquid pectin (each 3 oz) 4 TBLS. amaretto liqueur or 1/2 teaspoon/2 ml almond extract 1. Prepare canner, jars and lids. 2. In a small bowl, combine sugar and cocoa powder. Stir well and set aside. 3. In a large, deep stainless steel saucepan, combine sherries and lemon juice. Stir in reserved cocoa mixture. 4. Over high heat, stirring constantly, bring to a full rolling boil that cannot be stirred down. 5. Stir in pectin. Boil hard, stirring constantly, for 1 minute. 6. Stir in amaretto liqueur. 7. Remove from heat and skim off foam. 8. Leave 1/4 inch headspace in jars. 9. Process 10 minutes in BWB. Makes about seven 8 ounce jars. Enjoy! Deanna

red2225, I made "all fruit" preserves with some of my Bing's, I just crushed the fruit, squeezed a fresh lemon over the top, added a little bit of water and cooked it until it was thick, then sweetened with a bit of Equal for Cooking to taste. You could use splenda too, but Dad likes Equal better. I added the sweetener right at the end, then jarred it up and canned it. It set up fine, unlike the stuff with the Sure Jell for no-sugar which never did set. I hate commercial pectin. As Ken pointed out, a lot of people use Pomona's and love it. I'd rather just cook mine thick, I find Pomona's to be a bit bothersome to mix and use and I can only buy it via mail order, so I just cook mine. I did think of adding some white grape or apple juice for the additional pectin, in place of the water but that's another experiment. Annie

I hope to share seeds from another tasty cherry in a few years...got seeds saved from purple haze a few years ago, grew them out for a few distinct varieties, saved seeds from each and grew them out again in 2009 with some huge PL plants with massive production, one of which stood out as being extremely similar to Black Cherry (colour was exactly the same, shape the same, size slightly larger, flavour sure was close). You might check out Nottawa Fruit Farms

I don't know if they have black cherry preserves,
But they do have a pretty good variety of jams & jellies.

Their apple butter is the best in the world!

It's been a few years since I've been there.
I think I'm disappointed to find an Amish establishment
has a web site.

Rusty, I agree that is a surprise finding they use the internet. They close in Nov. but were kind enough to answer my email. Couldn't help me though. I do have one source, so if push comes to shove I can use it.

Jude, here is another scorce. The company is located near to me and has been in business for decades.

The black sweet cherries are mostly eaten fresh around here. Tart cherries are the cherry flavor that most people look for in jam type goods, that's why black cherries are harder to find. I wish I had a dime for every customer that I had to explain that to when I worked at American Spoon. :)

rusty, the people who have Nottawa are not Amish, they don't say anywhere on their website that they are Amish. They just live "in Amish country". They are retired school teachers, so it's not surprising that they have a website.

Jude, I have a lot of sweet cherries in the freezer, I ought to make some jam. Right after I'm done with Christmas cookies and playing with that new grand baby!

Annie, I guess I assumed they were basically Amish.
The times I've been there, many of the women working
in the store wore the Amish bonnets.
The girl at the register in one of the pictures
is wearing one.
I think there are different "denominations" of Amish.
With different dress codes,
And different 'rules' as to what modern conveniences
are allowed.
Guess I was wrong.
And I really do know better than to ever "assume" anything!

I just ordered a case from Clearbrook Farms. We like them, guess I was just trying to find another kind hoping they would be what I had in NC. These are probably just as good.

rusty, there are varying requirements among Amish communities, I suppose, but a business in an Amish area won't hesitate to hire Amish workers. They are hard working and honest, by and large they are good employees and very reliable.
