I have some mini mozzarellas and I would like to marinate them. I thought I saw a recipe here, but can't find it. Does anyone have one for me?

I would also like to marinate some feta cheese cubes.

Thanks for the help.

hi lisa! frohe weinachten (or something reasonably close to that...)

we've made this many times--always good! (and don't omit the anchovies) enjoy!
Marinated Mozzarella -- Roselin
1 lb fresh domestic mozzarella
1/2 c olive oil (I use the lite)
2 large cloves garlic, pressed
10 coarse grinds black pepper
2/3 tsp red pepper flakes
1/2 tsp oregano
1/4 tsp salt- less if using
4 anchovy fillets, rinsed and minced
Drain cheese of all brine. Cut in cubes. Whisk together all remaining ingredients. Toss with cheese.
Yield: about 4 cups

That's the one I was looking for!!!!!!!!!!
Thanks. I will have to add the anchovies tomorrow, but I will put the rest together tonight.
You only missed one letter, San. Weihnachten.
I wish you and yours a wonderful holiday season.

I made these ribs yesterday for dinner and posted the pic on the What's for Dinner thread. We love them! Leave yourself time, they have to marinate for a few hours. Chipotle-Glazed Ribs 3 lb back or side ribs 2 tbsp lemon zest 1 tsp salt 1 cup ketchup 2 chipotle peppers, minced 1 tbsp adobo sauce 1 1/2 tbsp cider vinegar 1 tbsp molasses 1 1/2 tsp cajun seasoning, or blend of paprika, cumin, cayenne, etc. (I make my own blend) 2 tbsp brown sugar Pour water in roasting pan to come 1/2" up sides. Cut ribs in 2-rib portions and place in pan in single layer. Cover and steam-roast at 325 degrees 75-90 minutes. Transfer to a large baking dish. Combine lemon zest and salt, rub all over ribs. Meanwhile, combine remaining ingredients and simmer 1/2 hour. Brush 1/2 the sauce over the ribs. Cover and refrigerate 4 hours, turning and brushing with glaze at least once. Preheat oven to 375 degrees. Let ribs come to room temperature. Bake, brushing with remaining sauce until heated through and glazed, brushing with sauce at least once.

I ruined my spaghetti dinner Sunday night. Made my own sauce from frozen tomatoes I grew last summer, plus onions and spices, browned hamburger and sweet Italian sausage, then I dumped in 3/4ths of a jar of "Arabiata" Spaghetti sauce I had left over in the fridge. The store sauce was spicy. I cooked (simmered) the sauce about 2 hours, made pasta and served it with cheese. Unfortunately, when I served it it was too salty and spicy. DH didn't like it. Our dog enjoyed it.

Glad you all enjoyed it. I'm also glad my daughter-in-law enjoyed Outlander this week. I told her how much I liked it, and encouraged her to put it on her Kindle. She did, and zipped through it in record time. I'd better hurry up and start the second one in the series!

I've used Roselin's with feta, the anchovies are perfect with feta!

Also used it with mini moz balls and cherry tomatoes on skewers, another big hit.

Merry Christmas to you and yours Lisa, I'm sure this is a very special Christmas!

Yes, it is, Chase. This one and each one we have hereafter. Nothing teaches you thankfulness, gratitude and the Christmas spirit like a life-threatening illness in the family.

i'm delighted to know that things turned out well for your son, lisa--that's nothing less than marvelous!

and i don't know why i didn't think of that marinade on feta, chase--i'll bet it IS good! if you like feta with a little bit of additional flavoring, try a light mix of oil and lemon juice and a bit of dried dill and a grinding or two of pepper. good stuff!
