noisy 'knocking' in pipes since shutoff valves install

Had a plumber install shut off valves under all sinks in my home since there were none before. Now I have very noisy pipes. It sounds like knocking and sometimes watter hammer. It does not happen where I have previously had a shutoff installed, only the new ones. Is it possible that the new supply lines and shutoffs the plumber used are too small and cause too much of a pressure change> We have well water and also recently had the system checked( calcium neutralizer cleaned and filled, well tank pressure checked). This is a new problem and I don't like my pipes knocking....
