Graham Cracker Chewies Crust 1 1/3 cups graham cracker crumbs 1 tablespoon sugar 1/2 cup butter, (1 stick), softened 2 tablespoons all purpose flour Topping 1 ½ cups packed brown sugar 1/2 cup chopped pecans 1/3 cup graham cracker crumbs 1/2 teaspoon salt 1/4 teaspoon baking powder 1 teaspoon vanilla extract 2 large eggs beaten Preheat oven to 350° Prepare the crust: Stir the graham cracker crumbs, sugar, and flour in a mixing bowl. Add butter and mix until moist and crumbly. Press the mixture firmly and evenly in the bottom of a 8 x 8 or 9x 9 baking pan. Bake 20 minutes. Prepare topping: Stir the brown sugar, baking powder, graham cracker crumbs, nuts and salt together. Mix eggs and vanilla, add to brown sugar mixture. Pour the topping over the baked crust, bake for an additional 20 minutes. Topping will still be a little jiggly and will settle as it cools. Let cool completely, then cut into squares. You can double the recipe and use a 13 x 9 pan.

Butter Cream Frosting for Sugar Cookies 1/2 cup butter or margarine (1 stick) 1 box 10X powered sugar (around 3 cups if using a bulk bag) 1 tsp vanilla flavoring 2 to 3 TBS milk Food coloring Sugar sprinkles (for after the cookies are frosted) Directions: Again, let the butter/margarine sit out and soften. That makes mixing much easier, and it¡¦s also easier to get the correct consistency when adding the milk. If the butter is cold, then it gets too thin as it warms up. If this does happen, just add a little more powdered sugar. Cream the butter and powdered sugar putting in about a half cup of powdered sugar at time. If the powdered sugar looks pretty lumpy, it¡¦s a good idea to sift it, so you don¡¦t have sugar balls in the frosting. Mix well. Add the vanilla. Mix. Add around 1 TBS of milk and mix. Continue adding a tsp or so until the frosting is the right consistency for spreading. If you discover you¡¦ve made it too thin, stir in a little sugar. If it¡¦s too thick or starts to get too thick as you decorate add just a tiny bit more milk and stir. Add a couple of drops of food coloring and mix if you want a single color batch. It¡¦s more fun, however, to divide the frosting into small bowls and let everyone make a color. Be warned that some people (mostly boys) will put in all the colors and make ugly brown frosting. It still tastes great. And, this really is about having fun. If you want sugar sprinkles, then take some regular table sugar. Put a 1/4 to 1/2 cup or so in a zip lock bag. Add a little squirt of food coloring. Squeeze the bag until the sugar is all colored. It's fun also to divide the sugar out and make various colors like with the frosting. Sprinkle on the colored sugar. You may need to very lightly tap the sugar on top of the frosting if the frosting is starting to set. If you want the sugar sprinkles but not buttercream frosting, then make up the colored sugar and pat that on before baking the sugar cookies. If you try to put colored sugar on cookies without frosting after they're baked, the sugar will not stick.

I made these with my Grand Daughters a few weeks a go and they were surprisingly good. Halloween Cutout Sugar Cookies Its easy to transform a basic sugar cookie dough into delightful Halloween treats. Using cutters shaped like ghosts and black cats, you can create spooky sweets that will cast a magic spell over holiday gatherings. 16 Tbs. (2 sticks) unsalted butter, at room temperature 3/4 cup sugar 3 egg yolks 1 piece vanilla bean, about 2 inches long 2 1/2 cups all-purpose flour 1 tsp. baking powder 1/2 tsp. salt Colored sugars and decorating pens In the bowl of an electric mixer fitted with the flat beater, beat together the butter and sugar on medium speed until light and fluffy, about 4 minutes. Beat in the egg yolks one at a time, beating well after each addition. Cut the vanilla bean in half lengthwise and, using a small, sharp knife, scrape the seeds into the butter mixture. Mix well. In a sifter, combine the flour, baking powder and salt. Sift the flour mixture directly onto the butter mixture. Reduce the speed to low and beat until well mixed. Divide the dough into 4 equal portions. Shape each portion into a ball, then flatten the balls into disks. Wrap in plastic wrap and refrigerate overnight. (The dough can be prepared up to 3 days ahead.) Let it soften slightly at room temperature before continuing. Position a rack in the upper third of an oven and preheat to 350°F. Butter 2 large baking sheets. On a lightly floured work surface, roll out a dough disk 1/4 inch thick. Using cookie cutters, cut out desired shapes. Transfer the cutouts to the prepared baking sheets. Gather up and reroll the scraps and cut out more cookies. Repeat with the remaining dough disks. Bake until the cookies are golden on the edges, about 8 minutes. Transfer the cookies to wire racks and let cool completely. Decorate the cookies as desired with colored sugars and decorating pens. Store in an airtight container at room temperature for up to 1 week. Makes 24 to 30 cookies, depending on cutter size. If you're making icing in several colors, first divide the uncolored icing into small bowls. Add food coloring paste to each, a tiny bit at a time, then stir with a toothpick until the desired hue is achieved. Apply thin icings or glazes with a clean pastry brush, a little at a time. Brush the icing evenly over the cookie using light, feathery strokes. (Thick royal icing can be thinned with equal amounts of lemon juice and water until the desired consistency is reached.) Apply thick icings with a pastry bag, which works best when nearly filled with icing. Decorative tips can be used for creating patterns, piping lines or writing messages.

Thanks for the project. It gave this stay at home something to do for an afternoon. They are more cake like, and don't have the buttery brown sugar taste of the original Tollhouse recipe. So while they are definitely good, I prefer the Tollhouse version, to which I add a couple of extra tablespoons of flour.
