I would fry the chicken in a little olive oil, remove the chicken, add the marinade to the pan and simmer to thicken....add back the chicken to re-warm ands erve. Sounds good! Linda C

Read through and didn't see my recipe anywhere in here so I'll add it to your list for consideration. FWIW, my DH refused to eat meatloaf based on horrific childhood experiences but after trying mine 20 years ago he's CURED LOL and asks for it weekly. 1.25 lbs ground beef (I usually aim for 90% lean) 1 cup dry pepperidge farm herbed stuffing (blue & white bag) 1 can Campbells condensed tomato soup 1-2 tsp Worcestershire to taste 1 egg dash of milk (maybe 1 T at the most) 4 slices bacon I beat the egg in the bowl first, then add Worcestershire and undiluted soup and mix together. Then add stuffing mix to moisten and add beef to all for thorough mixing to distribute the egg mixture throughout. Add dash of milk and mix in. Turn into a loaf pan - I use a pyrex glass one because it seems to form a nicer looking finished loaf - and pat down gently using a fork to remove air pockets. Top with 4 slices of bacon and pop into the oven for 50 min at 400. After 50 min, take out and drain grease. Put it back in for 10 minutes to finish. Here's what I learned the hard way - you have to let it sit in the warm loaf pan for at least 10 min after removing from the oven to allow the meat to reabsorb the juices and set which helps decrease crumbling. After 10 minutes rest, invert loaf pan onto dish, cut and serve. I find that it works well to pop baking potatoes alongside in the oven to cook the entire time as a side! Bon Appetit! Jen

LOL) I posted about cooking a brisket for bison and this sounds pretty close to what I did..shred or sliced thin and made a BBQ sauce. I usually make this in my roaster oven and put it out in the garage so it doesn't invade my dreams! Everytime I make it, it gets rave reviews. (I already had it typed out in Word, thank goodness!) BBQ Brisket 5-6 lb. Brisket (I use one with the fat trimmed off) Seasoning Salt Garlic Salt Worcestershire Sauce Pepper Sprinkle brisket generously with seasoning salt, garlic salt, Worcestershire sauce and pepper. Bake 30 minutes at 450°. (I put the brisket in a disposable pan with deep sides.) Cover brisket in foil and bake 7-8 hours at 225°. When done, pour juice off and chill both brisket and juice. Remove solidified fat from top of juice and slice brisket thinly. (an electric knife works best) Sauce: 1 C. Ketchup 1/3 C. Worcestershire Sauce ¾ C. Brown Sugar 1 Tbsp. Lemon juice For sauce: Use 2 cups of juice (add water if needed to make 2 cups). Combine all sauce ingredients with the 2 cups of juice from the cooked brisket and heat. Pour sauce over sliced brisket and heat in medium oven till hot

Here is a possum recipe from a book they used in researching the play: My son's character is an Oklahoma farmer who is losing his farm to the bank. He starts drinking and become abusive to his children. The dust kills their last calf and the bank takes their last cow and the land. The farmer, his wife and three children, and their two cousins whose mother has just died, take the family's truck and head to Oregon via California. Several other groups also head west. A Jewish insurance broker and his family who are being threatened by Klansmen in Ohio; two black sharecropper children who are homeless after their mother dies and the land is sold; four children who are sent to find their aunt in Oregon, after their parents can no longer feed them; a Mexican family from Texas; and various other ragamuffins (there were a lot of kids in this play!) Some travel in relative comfort, driving across the desert. Others have to ride the rails as hobos, scrounging work and food. Most of them reach a corporate farm camp in California, where the foremen are cruel but the camp store manager is kindly. Fear not, all the migrants reach their destination. Some find farm work in Oregon, some reach Portland, the Jewish family goes to Los Angeles and the Mexican family is reunited with their father in California . My son's character, with help from his strong wife and eldest son, gets his family safely to Oregon where they start a new life. Basically, he plays Pa Joad from "The Grapes Of Wrath", although to a happier ending. I just realized that he hasn't read that book: something we'll try to correct. As a matter of fact, I haven't read it for many decades myself, and I'm guessing I'll find the play parallels Steinbeck's story in many ways. They watched the movie as part of their project.
