Galvanized and copper pipe union

I am in the process of remodeling a bathroom and am about to install the shower valve. The house has galvanized steel piping and I plan on using copper pipe to connect the valve to the galvanized pipe. I realize there are issues in this with electrolytic corrosion, but this has lead to several questions.

1. In reading about this people have suggested using a dielectric union to prevent the electrolytic issues. However, there seem to be differing opinions as to whether these unions can be put in a wall which will have no access.

Can a dielectric union be used in a wall?

2. I have also read that a brass union can be used between the galvanized and copper pipes to prevent/minimize the electrolytic corrosion. Is this true?

3. If the answer is no to both of the above questions, short of replacing all the piping in the house, what can be done?
