Fermented Chinese Yams?

This morning's 'Daily Caller' has an interesting report. Chinese scientists found that a bacteria in the gut has a great deal to do with obesity. They put a 385 pound man on a diet of whole grains along with bitter melon and fermented yams (?)--this diet is apparently inimical to this bacteria, and he lost 113 pounds in 23 weeks.

Ordinarily I put internet stories like this in the same category as Weekly World News stories about Bat Boy, but this study was published in Nature, one of the most respected peer-reviewed journals out there. The Daily Caller story links to the Nature article.

Anyhow, what are fermented yams? I've had bitter melon before. Any other 'prebiotic' foods out there I should know about?

Believe it or not, winter is the best time for planting in Brisbane. The weather is warming up nicely now. Alas summer is too hot and humid for most vegies. Being new at this, it's been mostly trial and error on my part. I've had a mix of success and failures but thankfully the successes seem to be improving. :) I've tried okra, snowpeas, dwarf beans, yellow wax beans, snake beans, (and now yam bean), chillies, tomatoes and several types of Chinese vegetables. I love Ziedrich's book. Every recipe I've made so far has been a winner. I've learned a lot too. Hip Hip Hooray for a fellow Ory-gonian! (Ziedrich's from Corvallis.) OK, getting serious now. Deanna, I'd use dry sherry to substitute. Sake isn't the best for this recipe. Chinese rice wine is different. I actually have a bottle a friend brought back from China. It's a little pottery jug and the lid is tied with straw. Very cool. The one thing I wouldn't alter is the Sichuan peppercorns. They're very different from the "regular" kind. Carol

When we would grow our own, I found that the white sweet potatoes do not store well, so never grew them again. We never ever called either of them yams. However, growing up, my Grandma and Mother both called green sweet peppers, mangoes and many old recipe books also called them that. So when you know the difference you call them by their right name. I have posted sometime ago that there have been other studies indicating obesity might be caused by the lack of certain microbes in our system.

In her short booklet published in 1998, "Beyond Probiotics" Ann Louise Gittleman, M.S., C.N.S. (www.annloiuse.com) links a number of health issues to the reduced amount of beneficial bacteria in the soil and our bodies. She explains HSOs - homeostatic soil organisms - and how they are a missing link in our immune system.
