Fermented Chinese Yams?

This morning's 'Daily Caller' has an interesting report. Chinese scientists found that a bacteria in the gut has a great deal to do with obesity. They put a 385 pound man on a diet of whole grains along with bitter melon and fermented yams (?)--this diet is apparently inimical to this bacteria, and he lost 113 pounds in 23 weeks.

Ordinarily I put internet stories like this in the same category as Weekly World News stories about Bat Boy, but this study was published in Nature, one of the most respected peer-reviewed journals out there. The Daily Caller story links to the Nature article.

Anyhow, what are fermented yams? I've had bitter melon before. Any other 'prebiotic' foods out there I should know about?
