Cornmeal, corn flour, masa

I made cornbread yesterday for cornbread stuffing, which I made tonight. I made the cornbread with half corn flour and half corn meal, both from Bob's Red Mill, partly because I thought it was a good brand and partly because I did not see other brands of cornmeal at the market yesterday. I had 3/4 cup of Bob's corn flour left over, and I had used that the last time I made cornbread for cornbread stuffing for Thanksgiving. I thought the Thanksgiving cornbread had a slight off flavor - slightly sweet - which I do not like in stuffing. Also, I do not like sweet cornbread, and so both were off. I thought using the cornmeal would make a difference, but it appears to have the same sweet flavor that Bob's corn flour has. I had considered using masa instead of cornmeal/corn flour, and perhaps that would have been a better idea. I used the same cornbread recipe I always use, although I will admit that I forgot to add the baking powder this time - it didn't seem to make a difference, and I almost always use butter instead of bacon grease because of Kevin.

I want cornbread with a tart or sour flavor - something like sourdough bread. Do you think I need to find the cheap cornmeal that I used to use? That always gave me the flavor that I wanted, but Bob's Red Mill corn products are just too sweet, and they also have another flavor that I just cannot describe, but I feel that it does not belong in cornbread.

Should I add a tablespoon of vinegar to my cornbread recipe to counteract the sweet corn flavor? If so, should I increase the baking soda by 1/4 tsp? I can't remember what brand of cornmeal I used to buy (possibly Albers), but I am definitely going to look for it again. The Bob's cornmeal is good when I make cornmeal pancakes, and I think it might have been okay the last time I made hush puppies.
