If your oven is big enough, I would cook2 15 pounders. Turkeys never finish when expected at my house either....but they usually cook faster than I expect.....so the turkey is tented under foil and towels while I frantically mash potatoes and cook veggies! 2 15 pound turkeys should easily cook in 4 hours at 325 even if they are not completely defrosted in the breast. I start at 425 for maybe 29 minutes and turn the oven down without opening the door. Then, at 2 1/2 hours I check the temperature in the thigh with an instant read thermometer. If it reads 155 or above....the turkey comes out and is foiled and wrapped with a couple of bath towels to rest....the temperature will rise another 8 to 10 degrees in that time. Try not to worry. I always cook a bird that big or bigger if I can get them. This year since I ordered my groceries online, I got two turkeys and the biggest was only 19.08 lbs. It's our standing joke around here that to me that's a small turkey. The key to having juicy turkey is always to not overcook it, no matter the size. Cook the breast at the thickest part to 160 and the thick part of thigh can be 165. I stuff my bird and it still only takes between three and a half and four hours at 350 or 375. I'm sure the high heat people will advise on that aspect but I don't see why it would be a problem. Sometimes if I have a really large bird and I'm worried about the thigh cooking I might leave it untrussed so the legs can spread a bit and it cooks more evenly. I loosen breast skin, put some butter under it, salt the bird all over, stuff and put in an open roasting pan. Always have a nice juicy bird, with plenty of fond in the pan for a giant batch of gravy.

Good story. I heard of a woman who used her welfare card to buy a cake. Someone in line behind her said it was wasteful, she shouldn't be buying stuff like that, she should be buying healthy food. She turned around and said "This cake is for my son. He's three years old today. He has terminal cancer."

Kay, I'm so glad you grew up in a better place! You've done us all a good turn by posting. "We had NO IDEA there was a problem - we were just too young, and had never known anything different." See, I think this is a big obstacle in understanding people's actions. We don't know what they had or what they didn't have, or what went on in the houses where they grew up. A co-worker was telling us that she went to a child's birthday party & was disgusted to see that the parents, who were on food stamps, were grilling T-bone steaks for the party. That's it. no potatoes, no salad, *no birthday cake*. meat. Another co-worker, a thoughtful woman, said, "You know, my parents grew up in the Depression & spent their working lives in much more affluent times. They ate steaks & roasts as often as possible. They equated meat with prosperity, & potatoes with being poor. Maybe those parents on food stamps never had had birthday parties as children, & they were sharing the best they had with their guests." Speaking of children's birthday parties... My mother grew up very poor. Not only did she never have a birthday party, she never had anything else, either. When my brothers & I were *pre-schoolers*, my father's sisters urged her to have birthday parties for us, so she said ok. & here came my aunts to the house with little presents, usually underwear... & my mother served cake & coffee & chatted with the aunts while my brothers & I were sent outside to play.
