Mini sandwiches. Find some nice bread or rolls and lettuce, and make some ham and cheese mini sandwiches, egg salad, tuna salad, or even sliders if you want something more substantial. I love cream cheese, red pepper jam or jelly, and a favorite cracker.

hummus & veggies

I've made these and they were a hit with everyone. Note ***my changes

Margarita bites
2 cups boiling water
2 (3 ounce) packages margarita Jell-O gelatin**Can't find, used lime
1/2 cup tequila or 1/2 cup cold water **used tequilla little more to taste
1 lime, juice and zest of **didn't need cause of lime jello
2 cups thawed whipped topping
Directions:
1 Add boiling water to gelatin mixes in large bowl; stir with whisk 2 minutes until completely dissolved.
2 Stir in tequila and 2 tablespoons lime juice.
3 Add whipped topping and 1 teaspoons lime zest; stir until whipped topping is completely melted and mixture is well blended.
4 Pour into 8-inch square pan. I used a rectangular pan, but lots smaller then a 9x13, cause I wanted less thicker bites
5 Refrigerate 3 hours or until firm.
6 Cut into square to fit on round tortillas

The sweet and salty were a perfect bite.

I put the margarita bites on the tortilla crisps and took them to a meeting and the rounds stayed crisp and the squares didn't melt.

Green Chile Squares

. It can also be made up to 24 hours ahead of time and served hot, cold, or at room temperature. Best not to reheat as they get oily.

2 cups grated Monterey Jack cheese
2 cans green chiles
4 well beaten eggs
.

Preheat the oven to 350 degrees. Sprinkle the cheese and chiles in the
bottom of a 9X13 baking dish. Pour the eggs over the top. Bake for
30-40 minutes or until golden brown and firm. Cool to room temperature
and then cut into squares.

***I baked mine in a square pyrex dish PLUS I stir everything together and pour into the dish.

Marinated cheese: great with triscuits

1/2 lb cheese squares
1/4 c olive oil
1 tsp dried parsley
1/2 tsp garlic powder and onion powder
1/2 tsp oregano
ground pepper
salt
place in single layer, pour and distribute oil
marinate overnite
Let come to room temp before serving
Pour off any liquid before serving and extra spices that didn't stick to cheese

One more:

Bloody Mary Tomatoes and I took them to a Y party :o)

1 pint cherry tomatoes

2 tablespoons hot pepper sauce (e.g. Tabascoâ¢)to taste or optional I didn't use

1 cup vodka

2 tablespoons lemon pepper

2 tablespoons celery salt

1.Remove the stems from the tomatoes, and place them in a shallow bowl. Pour vodka over them so that they are covered. Stir in the hot pepper sauce. Cover, and refrigerate overnight. You can poke couple small holes in them to absorb more vodka if you desire
2.To serve, mix together the lemon pepper and celery salt in a small dish. Serve tomatoes floating in vodka. Provide toothpicks so that your guests may pick up the tomatoes and dip them in the seasoning before eating.

I know you didn't want cheese and crackers, but a round of Brie cheese melted slightly in the microwave (like 30 seconds) with grapes and sliced pears goes really well with wine. Very fast and easy, too.

We like these stuffed mushrooms and you could put them together and store in an air tight container before leaving for your day of adventure.

STUFFED MUSHROOMS

42 large fresh mushrooms
1 lb. mild sausage
1 - 8 oz. cream cheese, softened
1 tsp. crushed red pepper flakes (I only use about 1/2 that)

Clean mushrooms with a damp paper towel. Take out stems. Cook sausage until crumbly and drain. Stir in cream cheese and pepper flakes. Spoon into mushrooms. Bake at 350 degrees for 15 minutes.

This would also have to be made ahead so the flavors can blend. Depending on how many people you will be serving, you would have to at least double it since it only makes 1/4 cup.

CARRABBAâÂÂS BREAD DIPPING SAUCE

2 tbsp. chopped Italian flat leaf parsley
1 tbsp. minced garlic
1 tsp. dried thyme
1 tsp. dried oregano
1/4 tsp. dried basil (or 1 tbsp. fresh-if using fresh reduce parsley to 1 tbsp.)
1/8 tsp. dried rosemary (or 1/2 tsp. fresh)
1 tsp ground black pepper
1/2 tsp. kosher salt
1/8 tsp. ground red pepper (or 1/4 tsp. red pepper flakes)
1/2 tsp. extra virgin olive oil
1/8 tsp. fresh lemon juice

Place all ingredients except olive oil & lemon in a blender or food processor and chop until all ingredients are similar in size. Stir in the olive oil & lemon juice.

For Serving:
In a small dish, place 1 1/2 tsp. spice mixture. Pour 3-4 tbsp. extra virgin olive oil over top of the spice mixture. Serve with french bread for dipping. Makes ü cup.

Avocado Wraps

Boursin cheese
Avocado, diced
alfalfa sprouts
lemon juice
flour tortillas

Spread tortilla with Boursin cheese, sprinkle with alfalfa sprouts and avocado, sprinkle avocado with lemon juice. Roll up and chill. Cut in bite sized pieces.

Jalapeño Popper Spread

2 8 oz. cream cheese, softened
1 C mayo (can use 1/2 mayo - 1/2 cour cream)
1 4 0z. can chopped green chilies, drained
4 -6 Jalapeno, diced
1 c. grated Parmesan cheese
1/2 C. panko bread crumbs

Stir together cream cheese and mayo in large bowl until smooth. Stir in chilies and jalapeno peppers. Mix 1/2 C. panko crumbs with Parmesan and spread on top. Bake 400 20 min. Serve with toasted baguette slices. Dip can be mixed together the night before and baked just before serving.

Deviled Eggs

6 hard cooked eggs
1/4 tsp salt
1/4 tsp. pepper
1/2 tsp. dry mustard
3 T. mayo

Ham and cheese pinwheels

Boiled ham
cream cheese mixed with horseradish or a pkg Boursin cheese
green onions.

spread slice of boiled ham with cheese, put a green onion cut to size of ham slice (short side) on top and roll up. Cut in bite-sized pieces

Mushroom Appetizer

1/2 C. mayo
1/4 C grated Parmesan cheese
2 oz. mushrooms chopped and sauteed
1/2 of 28 oz. can French fried onion rings, crumbled
1 loaf of party rye or pumpernickel bread

Stir together mayo, parmesan, mushrooms and onion rings. Spread on pumpernickel slices. Broil till bubbly

You can mix together equal parts of blue cheese, butter and chopped pecans, melt it all together, let cool a little and then spread it on toasted baguette slices, then, using a cookie sheet- pop them into the oven for a few minutes to get melty and bubbly, they are SO good and rich and yummy.

You can have the spread ready to go ahead of time, and also pre-toast the baguette slices, so you can save time later when you're exhausted from all the fresh air and sunshine!

Yum - Flaming0, oven temp at 350?

400ú actually, but for just 2 minutes or so, don't let 'em burn!

A couple of others have posted stuffed mushroom recipes already, but mine are better :-)

Bob's Magical Mushrooms
1 lb white mushrooms
12 oz cream cheese
3 Tbsp butter
1 tsp minced garlic
4 slices of provolone cheese
3 green onions (chopped fine)

Remove stem and cut away the lower half of the mushroom exposing the gills
Soften cream cheese in microwave, mix garlic and green onions into cream cheese.
Melt butter in small dish.
For each mushroom, spoon the cream cheese mixture into the mushroom, then dip the top into the butter, and place in a glass baking pan. Then cover the top of the cream cheese with provolone cheese.
The above amount should fill a 13x9 baking pan.
At this point you can cover and refrigerate overnight.
Preheat oven to 400 deg F
Bake for 10-12 minutes until the provolone is melted and the mushrooms are cooked.
Serve immediately.

For a large fancy event for a club I'm a member of this past summer, the main meal and dessert were going to be catered, but to save money for the club, it was decided that some of the members would bring appetizers. I made approx. 240 of the above mushrooms, and all of them disappeared.

I have found you can make a variety of great snack food using the frozen Texas toast, you can buy it in different flavors, from garlic butter to cheese, it really doesn't matter which one you get they are all good. I add some pizza sauce slices of pepperoni and top with cheese for mini individual pizzas just cook in oven as directed on the toast box. I do a taco version using salsa black olive slices refried beans top with cheese. you can use your imagination and come up with lots of them, they are all good. For vegetarian use some portabela mushroom topped with blue or feta cheese.

They are very easy and fast.

I have had this at a party and it was wonderful, I have not yet made it myself but plan on it.
