It's a split pea soup kind of day

Here in Colorado, I had to start the soup at around 10 am. Usually, split peas only take a short while, but in this altitude it takes a while longer.
The bad thing is, I want to eat it NOW!!!!!

It's been snowing a bit here today. The sun is out now, and I just got in from taking the cat for a walk. He's doing soooo much better. No dragging and I didn't have to pick him up once! He met a couple of pugs, who's mommy wouldn't let them get too close because my cat has "stickers" hehe. He got to climb a tree as far as his leash would take him. Sniff in the bushes, scamper across leaves and generally snoop about.

I let him out on his leash every morning with the door cracked, in case a dog comes by and he feels the need to come inside to be safe, before I leave for work. Since ours is the last apt before you get to the parking lot, just about everyone walks past our door. I love how so many people stop and talk to him or pet him. He really loves the attention too!

Jean, I've missed the history about this cat. Is he new and you're getting him used to a leash? Or have you decided to keep him inside except for occasional leash time? Whatever the reason, good for you for keeping your kitty safe and healthy inside!

Any day is a pea soup kind of day for me! We both love it, don't get tired of it, and it's the soup I make more often than any others.

Food grade peas or beans are not treated with chemicals for drying. Your split pea soup is fine to eat. We wash split peas and dried beans to remove the dust created by all the dried peas banging together. Soaking them is to remove all the floaters (which will not be dangerous to eat either) and make tthose hard little semi spheres soft to cook faster. It will not hurt you to eat soup made from peas that have not been washed or soaked. Enjoy your soup I wish I had made some too! It's COLD today! LIL

Pllog, here is my "lighter" pea soup recipe. I got it from "epicurious.com" but the attribution says "Bon Appetit, Dec. 2006." Split Pea and Green Pea Soup With Fresh Dill 3 TBLSP extra-virgin olive oil 1 large leek, white and pale green parts only, chopped (about 1.5 cups) LR note: I would probably often have to sub other types of onions as I can't usually afford or find leeks. Occasionally they do become available in the market at reasonable prices though. 1 bay leaf 1 cup green split peas, rinsed 5 3/4 cup (5.75 for you decimal folks!) vegetable broth, divided. Could use chicken if you don't have veggie broth I guess. 1 cup frozen peas, thawed 5 TBLSP chopped fresh dill, divided. LR note: I rarely have fresh dill and often have to make do with dried so I would do that to taste, starting with 1 TBLSP. Heat oil in heavy large pot of med. high heat. Add leek and bay leaf. Saute until leek wilts, about 3 min. Add split peas and stir to coat. Add 5.25 (5 1/4 for you fraction folks) cups of broth. Reduce heat to simmer until split peas are just tender, about 35 min. or longer with more water depending on how old the dried peas are . . . (LR's note) Remove from heat and cool somewhat. Transfer 1 cup of soup solids and remaining 1/2 cup of broth to a blender. Add peas and 4 TBLSP of fresh dill. Puree until smooth. Return puree to pot with rest of peas. Season to taste with salt and pepper. Ladle into bowls and serve sprinkled with remaining fresh dill. LR notes: I would not do that, I would mush up just the frozen peas with a hand blender and then add them and mash the rest a bit with a masher to combine, or else just add the frozen peas to the pot and use the hand blender to blend mostly just the area with the frozen peas. But who am I kidding, I probably would just add the frozen peas and give the whole thing a zip with the hand blender, trying to keep pea soup out of my hair and the stove area . . . This would be great with buttered herb croutons if you are so inclined . . . I've also made it with spinach and chopped pea pods added, and maybe some fines herbes . . .

Here is a wonderful tried and true recipe from Stefano Faita A French Canadian soup INGREDIENTS 1 tbsp. olive oil 2 tbsp. butter 1 onion, diced 2 carrots, diced 2 celery ribs, diced 2 leeks, diced (white and light green parts only) 2 garlic cloves, chopped 2 cups yellow split peas, rinsed (about 1 pound package) 3 savory or thyme sprigs 1 bay leaf Freshly ground black pepper, to taste 1 leftover ham bone 2 cups diced ham 4 cups chicken stock, preferably unsalted or low sodium 4 to 6 cups water Salt, to taste, if needed Handful flat leaf parsley, chopped Extra virgin olive oil, for garnishing (optional) Parmesan Croutons or crusty bread, for serving PREPARATION Heat the olive oil and butter in a Dutch oven over medium heat. Add the onion, carrot, celery, leek and garlic and cook until soft, about 5 to 7 minutes. Add split peas, savory, bay leaf, black pepper, ham bone, ham and stock. Add enough water to cover the ham bone. Bring to a boil. Reduce heat to low. Gently simmer, stirring occasionally, until split peas are tender, about 1 to 1 1/2 hours. If the soup is too thick, add some water or stock to loosen. Taste and season with salt, if needed. Remove savory and bay leaf before serving. Stir in fresh parsley. If desired, serve with a drizzle with extra virgin olive oil and Parmesan Croutons or slices of crusty bread. Yield: 8 servings.

Do you have a whole bunch of peas? You can shuck them or just clean the pods and cut them less than 1/2” across. You can also use sugar snap peas or snow peas. Each has a slightly different flavor, but all are good. The most important thing is fresh and firm. For 2-3 quarts of soup, 2-3 cups of peas. 2-4 cups of not too assertive clear stock, and water as needed. The rest depends a lot on the flavor you want. You can start with a sauté of aromatics. A good sized spring onion is ideal. Or a couple of scallions. Sliced thinly. Whites and greens. I find that a couple TBSP butter can improve pea soup, but oil is fine. Add the peas and stock, bring to a boil and the simmer until the peas break down. Puree with blender or food mill. Have a texture you want in mind. I like coarse. Others prefer silky like cream. Or in between. Add seasoning To taste. I like dill in pea soup, as well as diced carrot and pearl onions. It's really whatever you want.

I take my cat out on a harness and leash, too. He's used to it so he's finally learned to walk fairly nicely on it. He loves going out--too much!

I also love making split pea soup in the crockpot. I make it with Canadian bacon and it smells so good! One thing I do is to put a couple shots of tabasco in it--gives it just a bit of a "bite."

May I tell a little story about split pea soup?

My DH was serving in the Army Air Force in the South Pacific in WW2. When the war ended and he and his comrades were brought home, it took 13 days on board ship to get back to the US. He said they had split pea soup every day and he hoped when he got home never to see a bowl of it ever again! I made sure that he didn't.

Any time I hear those words ... split pea soup ... I remember his words.

rhizo, this is the cat, formerly known as Bat, but we changed his name to Loki, cuz he's such a trickster. This picture was taken a few months ago.
We got him at the pound as a tiny thing just before Halloween, and his card said he was brought in as a stray. I imagine he had lived on the street.
He's a big guy now, and sometimes hard to remember he's still just a kitten.

The darned soup still had some hardish bits in it, even after simmering for over 7 hours! We ate it anyway. The leftovers should be good tomorrow.

Does anyone rehydrate the split peas before using them. I started to, so instead of just rinsing them twice I then put them in a two cup measure cup with water and they absorbed it all in a couple of hours. I found the soup cooked so much faster and no hard ones left. Cut cooking time down over two hours last week when I made it. I know not the cooking thread ...but I don't have cats or dogs....only fish :^)

There's a first step I follow with split peas and dried beans to speed cooking and reduce intestinal flatulence.

Put the legumes into a pot of water with at least 3X the volume of water as the volume of dry beans/peas.

Bring to boil. Turn off heat, cover, let sit one hour.

Pour off water, then use the almost fully cooked legumes to prepare whatever recipe you're making. Soup can be done in as little as one more hour. You can saute onions and other veggies in another pot while the peas sit. Or, take out the peas when done, use the soup pot to saute the veggies, then add back the peas and whatever liquid and other things you use.

No, I do not soak the peas. I used to but found it not to be necessary. The soup only takes a couple of hours from start to finish for me. Perhaps I use a higher heat or something.

Your pretty black cat looks like my Paco, a little lost soul who had the wisdom to come into our garage one evening five years ago and has been part of our household ever since.

I am not fond of split pea soup but I did fix 15 bean soup over the weekend, can't taste the split peas too much in it. I soaked mine over night and then cooked it long and slow in my crock pot added some ham to it later.
