I think I have the menu finalized:

Spanokopita in mini fillo shells

Thai tuna in cucumber cups

Lemon tuna in cherry tomatoes

Chicken satay [spicy peanut sauce] skewers

Chicken jerk skewers w pineapple-mago salsa

Lemon Basil Panko Crab cake

lemon-lime aioli

remoulade [mustard sauce]

Roast beef Baguettes with toppings

Mediterreanean: Tomato, Artichoke, Olive, Feta

Gorgonzola Balsamic & Carmelized Onion

good?

Mom will have stations with chunk cheese, fondue, and bread.

Phyllo , filo who cares ! That is one fabulous menu, what a great selection sure to please everyone.

Actually the idea came to me some time ago: 1. A hot dog is a hot dog, itÃ¢ÂÂs a Ã¢ÂÂlow-rentÃ¢ÂÂ Ã¢ÂÂball-parkÃ¢ÂÂ food item even if you wrap bacon around it. How do you make a gourmet appetizer dog? 2. Hot dogs can taste good, but too much fat, and sodium. Of course you can cut a hot dog in half lengthwise, but you will lose a few friends that way. I needed a way of making a hot dog with less meat without making people feel that they are being cheated. 3. How do you make kids eat asparagus? So I came up with this idea, and developed a gadget to make the hot dog tubes precisely and quickly. Interestingly even with a lot of the meat removed, you still get the good feeling that you are eating a hot dog. When you serve it on homemade bun/bread, ------- that elevates the lowly weenie from an underdog to royal connoisseur appetizer status. I agree with Jo, there are other ways of using this concept. This opens up a lot possibilities of hot dog appetizer ideas. I can see all kinds of fillings you can inject inside the tube. The meat removed is not wasted. I found that it gives better texture and taste in making meat balls and meat loaf. dcarch

Sounds lovely, I love appetizers! I add a cheese based appetizer or two and eliminate one of the meats. I'd also be leary of anything requiring a dipping sauce as they can be tricky to serve if you are passing the appetizers and the quests are standing. Also think that something with a zip to it may be nice. Here are two recipes I have great luck with. Spanikopita 16 Oz Phyllo Dough Thawed in the fridge For 24 Hours 10 Oz Frozen Spinach Thawed and drained 3/4 Lb Feta Cheese 1/2 Lb Cottage Cheese - About 1 Cup, Pressed And Drained 1/4 lb Cream Cheese Softened 3 Eggs 1/4 Cup Fresh Dill Chopped Fine Salt Pepper dash of Nutmeg 3/4 Cup Butter Melted In large bowl combine all ingredients except phylo and butter. Working with one sheet of phylo at a time, brush with melted butter and cut in 5 strips lengthwise. Place 1 spoonful of~ mixture at the bottom of each strip about 1 inch from the bottom, fold the bottom piece up over the filling and then fold up into triangles. Fold like you fold a flag, to the left, up , to the right ,up etc. These can be made ahead and frozen for up to three months. When ready to cook:P lace frozen Spanikopita on a baking sheet and bake at 350 for 20 minutes or until golden. Serve warm Salt Baked Potatoes With Goat Cheese 3 Cups Kosher Salt 18 Small New Potatoes Halved And Scooped Out Slightly 2 1/2 TBSP Olive Oil 3 Cloves Garlic Minced 14 Oz Goat Cheese At Room Temp 4 Tsp Fresh Thyme Fresh Ground Pepper To Taste Basil Leaves For Garnish Preheat oven to 400 Spread salt on the bottom of an extra large baking dish. Toss potatoes with 2 Tbsp olive oil. Press potatoes cut side up in salt. Roast for 35-40 minutes or until tender. Remove potatoes and scrap off excess salt. Place potatoes on a clean baking sheet. Turn on the broiler. Heat remaining 1/2 Tbsp of olive oil. Saute the garlic until tender Transfer to a medium sized bowl, add cheese, thyme and pepper. Stir to combine. Fill each potato with the goat cheese. Broil for 1 minute or until bubbling. Serve garnished with basil.

Thanks for all the ideas. (BTW, no cheese in my chicken pot pie.) I made some stuffed mushrooms, and will put out a veggie/dip platter, along with some mixed nuts, and a big bunch of grapes. It is tough to answer these types of questions without knowing the guest list.... but carbo- loading every now and then has never been a problem. And we all live in the nyc metro area.

Suzieque, it's a curse! I always have made pretty tasty appetizers, some very complicated, so am now expected to ALWAYS bring the appetizers and have to hunt and hunt for something different and delicious, because I party with the same groups of people most of the time. An easy one that I've made is to take a block of cream cheese, pour over to cover with seafood cocktail sauce, then top with those little fresh salad shrimp (not sure where you live, but they are readily available here). To make it a little more "fancy" I'll roll the cream cheese into a ball or oval, to disguise the fact that it's just a block of cream cheese, lol, then do the rest. Serve with sturdy crackers, like wheat thins or such.

It all sounds great! Just a note about my experience with the mini phyllo cups, if you are buying the premade ones.
I forget the name, but the brand is the famous greek name (Athens?). Anyway, they come boxed in a plastic tray, each with its own holder (like cupcakes). I opened one and ate it with the crab filling and all I could taste was a chemical taste, like petroleum smells. So I tried one plain. Same thing, only moreso. I called the company and they said that was the first time ever, in xx years, that they have had that complaint (chemical taste). I tried the other box and tasted the same off thing. I suggest that you try one first to make sure that it wasn't a freak occurance. I could not serve the appetizer as I thought it was ruined by the shells. Of course, there is always the very real chance that the wierd smell was in my head, but I don't think so. Your day sounds too important to take a chance on something not coming out right.

I agree, it sounds great, I like everything but the roast beef with the caramelized onions sound especially good.

Relax, you'll be fine and the party will be a hit. With that menu, everyone will find something to eat.

Hi all! What a great success the party turned out to be...everyone loved the food they were very surprised that the hosts daughter was making all the major goodies. I got accolades abounding, offers for jobs to cater, and questions as to whether I do this for a living and why aren't I? [um, 'cause it's *hard*!, all you pros have my complete respect] I just felt like a million bucks for making Mom and Dad's guests happy. I can only say thank you to everyone here for being an inspirational support system and fueling my cooking desire where I felt strong enough to do this. Hell, having people over for dinner is one thing, taking your show on the road in someone else's kitchen is another altogether!!! I was major league stressed out praying this would all work out.

Again, without all of you and the great experiences I've had cooking new and different things and honing new skills in not only preparing but presenting food - I would never have had the intestinal fortitude to attempt such a thing. I love that my Mom and Dad were able to entertain friends they haven't seen in years with confidence. Whew! Thank you.

Oh, and BTW my laptop took a nose dive Friday so I was flying by the seat of my pants and couldn't even check in here or ask you guys one of a million questions unless I hit one of the other pc's in the house and with all the prep I mired myself in that was not in the cards, or I woulda been all over you guys with questions!!

Sands, I have seen fillo spelled that way on packages of it in the grocery. So you were not wrong. Relax. Sounds like you have everything under control. Lovely menu, BTW.
