I took a gamble that the fruit from our ornamental quince tree (bush?) would be edible and made some membrillo (quince paste; you cut it into little pieces and eat it with cheese, like Manchego).
It was fun! Amazing how the color changes from apple compote-gold to deep brick red. And it did come out really good. I just used quinces, water, and sugar. Next time, I may use a touch of cinnamon and/or pomegranate molasses.
I have a few more quinces, so I can make a little more, IF you can help me. Not all of them are lemon-yellow; several are still light green. Can I use those? It's not like the ripe ones aren't inedibly sour anyway before you cook them with all that sugar.
One other question: I dried the paste in a slow oven for an hour, and now I'm leaving it out on the counter for a few days. But assuming it stays sticky, do you have any suggestions for slicing it?
