For those who brine the turkey --

What seasonings do you use? We've been using sea salt the last few years for the brine, per a chef's recipe, then a rub of soft butter mixed with garlic, sage, and pepper on the turkey, both on and under the skin. Everyone loves the result. I'd love to hear what others here do.
